Blueberry Cream Muffins

These were WONDERFUL! I followed the recipe exactly - only adding 1/4 teaspoon of almond extract to the filling. They were moist and very tasty! Don't be turned off by other reviews! These are really simply, easy muffins that taste GREAT!

My Kid's Favorite Pork Chops

This turned out great! I used a salt free herb rub in place of the steak seasonings and paired it with garlic salt and onion powder. Browned the pork chops in a tablespoon of EVOO. I used 1 can of miller lite because my husband couldn't part with any of the darker beers we had! We didn't have much BBQ sauce left, I'd say about 1/4 cup of sweet baby rays, plus about 2-3 tablespoons of Worcestershire sauce and 1/4 cup of apple cidar vinegar. I left it simmer for about 2 hours with a vidalia onion. I made a zucchini risotto to pair with it. It was EXCELLENT!

This was sooooo good we're having it AGAIN on pork! Excellent! We had to substitute fresh garlic for the garlic powder and STILL turned out amazing! This is a keeper!

Light PHILLY 20-Minute Skillet Salmon

This was awesome. We doubled the cucumber sauce. I used plain cream cheese, 2 tbsp italian seasoning, 2 garlic cloves minced, 2 tbsp lemon juice with the dill and cucumber. Turned out great!

Pineapple Sponge Cake

This turned out very good. Nice and light. I added crushed pineapple to the bottom of the pan before adding the batter. This kept the cake from sticking to the top and made it easier to remove.

Chocolate Chocolate Chip Cookies I

Everyone LOVED these cookies. The recipe made so many, that I took half in to work after they were 3 or 4 days stale and they begged for more! These are chewy and wonderful. Great for satisfying that chocolate craving.

Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta

Turned out great. We sauteed onions w/ garlic and EVOO and skipped the spinach because we didn't have any on hand and this was still great! We baked at 400F for 45 min and then broiled at 450F for about 10 minutes. Bacon was crisp, chicken was moist and full of flavor.

Beef Barley Vegetable Soup

This turned out WONDERFUL! My family is begging for me to make it again. We used the quick cooking barley and just added to the chuck roast right before adding to the remaining ingredients. I also substituted fresh tomatoes blanched to remove skins for canned which makes it a little sweeter and beef stock.

Sour Cream Chocolate Chip Cake I

I used the 9" pan and it took MUCH longer than the 30minutes, for us it was closer to an hour and by the time it was done, all my chocolate chips had sunk to the bottom of the cake and made a sticky mess. It was still good, however, next time we'll try less chocolate and the 11x7 pan. The cake, however, was wonderful, spongy and moist and not too sweet - which is what I was looking for!

Seven Layer Taco Dip

Everyone LOVED this recipe! Huge hit for the Superbowl. I used the ground beef mixed in the refried beans with the taco seasoning and had to keep the salsa and onions on the side! But it was GONE!

French Toast Souffle

We made this last minute and didn't have cream cheese - so instead of cream cheese, milk and half&half - we used 1/4 cup butter, 1 cup heavy whipping cream, 6 eggs, 1 tsp vanilla, 1 tsp cinnamon, 1/2 tsp nutmeg, 1/2 cup syrup and 1/2 cup white sugar. Poured over half loaf of white bread cut in cubes in a 9x9 baking dish and baked at 375F for 45 minutes. It was perfect and not a crumb left.

Grandma's Green Bean Casserole

EXCELLENT recipe! We used a little less sour cream and cheese and sauteed the onions a little while before continuing, but overall this is excellent and much better than the "cream of mushroom soup/ french fried onions" typical recipe!
