This recipe sounds really yummy but Geeze Louise, with all this pounding it's giving me a headache and I haven't even started yet! Why not just buy the thin sliced boneless, skinless chicken breast then cook as directed! I'm always looking for the easier route!!

I made this recipe last week (and was dumb enough to believe I came up with it on my own). I'm glad to see it in print! Anyway, after baking the chicken, I topped it with the Roasted Red Pepper Cream Sauce and then sliced mozzarella on top. The family loved it so much that I made it the next night too! There wasn't any for left overs!
