Breakfast Pies

I give it 3.5 stars. After reading all the reviews and seeing that the canned biscuits can puff up too much, I made my own biscuit mix with Bisquick. I added some cheese to the egg mixtures and some salt, pepper, and garlic to the sausage mixture. The flavor was good, and everyone at church liked them a lot. I had sprayed my muffin pan with non-stick spray, and this made it hard to spread the biscuit mix up the sides, so I had a lot of biscuit on the bottom (as opposed to the biscuit "crust" the recipe is going for). Overall, good recipe, easy to make and easy to mix up with different ingredients.

Baked Salmon Fillets Dijon

This recipe was so easy! I didn't measure anything, just added whatever looked right. haha. I had to cook mine a bit longer at 400 and then broiled it for a couple minutes to get the top crunchy. The dijon was a little overwhelming at first, but it definitely grows on you. This is actually better the next day (eating leftovers now for lunch!). Might try using honey mustard to see if we like that better.

Poppy Seed Chicken II

Made this tonight for a bunch of men and they loved it. I cut up and cooked some chicken with onions and garlic, mixed it with the rest of the ingredients and threw in some peas. I noticed that it wasn't enough chicken, so I threw it in the fridge, and on the way back home later in the evening I picked up a pre-cooked rotisserie chicken and pulled meat from it until the whole mixture filled a 9x13 pan. I used poppy seeds in both the chicken mixture and the topping. Served with roasted red potatoes and crescent rolls. Will make again!!

Broiled Red Potatoes

These were a great side for chicken with balsamic cream sauce (from this site) and some green beans. I doubled the recipe and added some garlic powder. Looking forward to trying this technique with other seasonings.

Balsamic Cream Sauce

Very good! This is what I did: I sauteed onions and mushrooms together in some butter, olive oil, garlic, and S&P then made the sauce in the same pan. I used half and half and added some parsley. I used the sauce to top chicken that I had coated in parmesean and bread crumbs and cooked on the stove top. Served with broiled red potatoes (from this site) and green beans- the combination was wonderful! Made for yummy leftovers :)

Pizza Pinwheels

What's not to like? Super easy. I chopped up the pepperoni because it made things much easier, used reduced fat crescent rolls (because I totally can't tell the difference!), and used spaghetti sauce (because it was cheaper than pizza sauce. haha). Served at a lingerie shower- didn't have any left.

Cashew Chicken Wraps

Two thumbs up (well, four if you count the fella's :) ). I grilled the chicken on my george foreman (seasoned with salt, pepper, and garlic powder). I used light mayo (and probably less than the recipe calls for), went a little lighter on the celery, added extra cashews (my fave!!), and added some mixed greens to the wrap. I used whole grain tortillas, but would like to try it with flavored tortillas. If you don't have cheese- just go ahead without it. I thought it was pretty unnecessary. Overall, this was a great chicken salad recipe that I think would be yummy on some whole grain bread. Will make again for sure!

Honey Fruit Salad

This was very yummy! I was hosting a bridal shower and wanted to make it a bit more girly so I put the fruit on little skewers to make kebobs and then poured the sauce on top. I used strawberries, bananas, grapes, and pineapple. All the girls LOVED them!

Tortellini, Steak, and Caesar

This was a winner for us! Left out the tomatoes (not a fan), used Ken's Steak House light dressing, and had to cook the steak a little longer than directed (maybe about 8 minutes per side). Very yummy and very different! Next time I make it I think I will add some grated parm :)

Garlic and Ranch Turkey Burgers

Made these last night on the George Foreman for me and the fella. Good flavor, easy to make. The texture was different than a beef burger, may have been the turkey I used. I took the advice of others and added some bread crumbs. Topped mine with American cheese and he used pepperjack. Served with spicy curly fries. Will probably make again.

Simple Ranchy Breaded Fish Fillets

Ok, so I didn't read through all of the reviews, but I think I'm one of the only ones who tried this with actual ranch dressing (in the bottle). I seasoned my fish with some salt and peper and then coated them in a thin layer of ranch (that I had added a little pesto to). I then coated them in bread crumbs (seasoned with some garlic/herb blend and dried rosemary). I cooked them over medium heat for about 5 minutes on each side in some oil and butter. The flavor was good, but I couldn't quite get them crispy enough (the thinnest parts were the best). And I think in trying to get the crust nice and cruncy the fish was cooked too much. Nonetheless, my boyfriend liked it a lot and we're looking forward to following the actual recipe next time. Hey, never hurts to try! :)

Rosemary Ranch Chicken Kabobs

I don't have a grill so I had to change it up a bit to make in the oven. I marinated the chicken for about four hours and then baked them with baby bella mushrooms, onions, and zucchini (which I also marinated for a while, as well). I had soaked the skewers in water for a couple hours and then baked it all at 450 for 10 minutes or so, and then turned them and cooked for another 10-15 minutes. They came out really well! I served it with garlic and olive oil couscous, and they went well together. My boyfriend really liked this recipe and I'm sure we'll use it again.

Country Apple Dumplings

One word: Trouble. You will definitely eat too many of these. These are so ridiculously good!! We have these at every family holiday party and have to give the recipe out each time. SO good with vanilla ice cream. We definitely cut back on the butter, and we generally use Diet Mountain Dew- works just fine. And we always top them with chopped pecans. This is one recipe you have to try!

Oh my gosh- such a flashback from childhood! My mom made a variation of this recipe all the time when I was younger. She used small rolls that come in a throw-away pan. I could eat wwaayy too many of them if not supervised :) Highly recommended!!

Quick and Easy Alfredo Sauce

This is a great recipe. I use light cream cheese and low-fat milk, and it still is wonderful. This was the first recipe I ever made for my boyfriend, he still asks for it all the time! I always use a lot of garlic, and I usually mix it with chicken, broccoli, and sauteed mushrooms. So good!
