Pumpkin Chocolate Chip Muffins
These were okay. the chocolate chips didn't seem to belong. I made half with, half without. I substituted applesauce for the oil like other members. I wish I didn't do that. They turned out a bit chewy.

Chicken Florentine Casserole
Made this to freeze and bake for those evenings when dinner has to be easy. Very rich. Very good.

Lentil Soup
Better the next day. It was bland the night I made it (a bit disappointing). But it was much better as leftovers for lunch. I think the flavors needed to marinate together for a while.
