Almost No Fat Banana Bread

For a almost no fat banana bread this was VERY good. I lessen the sugar to 1/2 cup, increased cinnamon to 1 1/2 t. and added some vanilla. I made into 12 muffins instead, and it took 20 min. to cook. I will definitly make again. A great way to use up over ripe bananas and have a healthy snack!

Chocolate Trifle

This was Heaven in a bowl!!!!!!!!!!! I used fresh strawberries to layer also. Can't go wrong with Chocolate and Strawberries! It looked so beautiful in the bowl!! Very good.

This was good and moist. But I didn't like it as much at Janet's bread here on this site. This was easy to make though. I felt it could of been a little sweeter.

Asian Orange Chicken

Well.....we didn't care for this to much. The sauce consistancy was good, but not the right flavor. Looking for more orange flavor. I doubled the recipe but didn't double the brown sugar, it would of been way to much!!! I was hoping for something better, the search is on.

Cube Steak Parmesan

This was very good. Just like chicken parmesan except with beef. I used panko and italian bread crumbs instead of crackers. I used a jarred red pasta sauce for the sauce. It was very flavorful. Will definitly make again.

Fudge Truffle Cheesecake

Awesome!! This was the first ever cheescake I made!! It was very creamy. Not overly rich. The cookie crust wasn't quite right to me. It tasted good, but I think I would prefer a grahm cracker crust. I will definitly make again!!!

Easy Olive Martini Chicken

With all the high reviews I really thought I would enjoy this more. I pretty much stuck to the recipe. I just didn't find it very flavorful. The sauce was to runny. Maybe some tweaking can add some flavor to it. And maybe thicken up the sauce a bit. I served over pasta. It was good, but not what I was expecting I suppose.

Cream of Mushroom Soup I

Very Yummy. I was looking for a cream of mushroom and artichoke soup I had at a restaurant recently. I used this recipe and added about 1/2 cup of artichoke hearts. I also added some minced garlic and pappy's seasoning. I used marsala wine instead of sherry. I used an immersion blender right in the pot. It was very creamy and very yummy!!!!! Will definitly make again and again.

Broiled Tilapia Parmesan

Very good and Very easy!!!!! I used sour cream instead of mayo. And added a bit more seasoning. My son who doesn't eat fish said he liked it. I served with orzo pasta and a veggie side. Very nice meal.

Restaurant-Style Prime Rib Roast

Turned out excellent! I cooked 15 min. per pound. I added about 1 cup of water to bottom of pan to avoid the flour from burning. I put on a roasting rack inside the roasting pan. I will definitly use this method and recipe again!

Roast Sticky Chicken-Rotisserie Style

This was really good. I only cooked one. So, obviously, cut spices in half. I liked the idea of putting in oven and not worring about it till dinner time. It was very moist and flavorful. Will definitely make again.

Creme Brulee II

Well......I should of read reviews before making. I thought this was the recipe I used twice before and they turned out perfect. This time it never set up. I let cook for a lot longer time, and it never set up properly. The flavor was good, just to runny. I should of used more egg yoks per the other reviews. I don't think I will make this again. I will search for the other one I made before.

Slow Cooker Carnitas

Very good!!!! I used some of other suggestiions: Doubled spices except salt and cinnamon. At end of cooking take out of crock (removing any fat and leaving juice in the crock) and put in baking dish. Shred meat with two forks. Add about 1/2 cup of the juice from the crock to the meat. Put in 400 degree oven for about 20 min. add another 1/2 cup of juice cook 10 min. more till crispy. My husband loves carnitas and he said these were awesome!!!!

Red Enchilada Sauce

This was soooo good!!! Served over homemade tamales. I used ground red pepper and added a little cocoa. It was very spicy, but that's how we like it. I put it in food processor after cooking to give more of a sauce consistancy. I will definitely make this again. Forget the can stuff forever!!!!!!!!
