I love this bread! Healthy, no GMO's, MSG or preservatives and my kids love it. I tweaked it a little. I made this with a Kitchenaid mixer. I let the yeast, water and honey proof for 10 minutes before adding 4 cups of white flour then let it sit 30 minutes. I then added the butter, salt and honey as directed. I then added in 1/2 cup King Arthur RED whole wheat flour, 1 cup King Arthur WHITE whole wheat flour and 2 more cups of white flour. I let it rise about an hour in an oiled bowl. I puched it down and then let it rise again in the refrigerator for 2 or 3 hours (until doubled). At this point I put it into oiled loaf pans to rise one more time or shape it into loafs for the freezer.
