Basic Crepes

the trick is to make a well in the flour and put the eggs in there, whisk them and allow the flour to add itself in. it does take some time (and effort). then, slowly add in the milk, like a pour at a time, then the water a pour at a time. dumping it all together will make a lumpy mess. The trick to frying (crepes or pancakes) is to have your skillet/griddle HOT and pre-greased (butter, bacon grease, shortening, coconut oil) before even trying to put anything in it. It should be almost smoky, if not smoky, before you pour your batter. You'll never lose that first one if you just let your pan get searing hot first. And be sure you drop another spoon of your greasing agent between each batter pour, and allow it to melt and get hot THEN pour your batter in. Again- it's a time consuming endeavor, but if you want perfection this is the way to go. Great recipe! Thank you!

Vicki's Hush Puppies

I made these twice, once with onion, once without, and both times they were just hard. The hush puppies I've had are soft and fluffy, these were pretty much inedible because of how hard they were. Guess I'll keep searching for the recipe I lost.

Sweet and Spicy Sweet Potatoes

Miss Betty's Super Quick Dinner Rolls

While these were very quick, they weren't very good. They didn't ever brown, so I cooked them a few minutes longer thinking maybe it was just my oven, which essentially turned them into rocks. Rocks that tasted like biscuits, not dinner rolls. They would work in a pinch if you really needed a bread, but remember, they taste like biscuits, not dinner rolls- and I used self rising flour. I tripled the batch, which was a good thing, because I barely got 12 'muffins' out of it (I have 6 to feed). I had found a dinner roll recipe a few years ago that had mayo in it and it was great, I tried to find it again- this wasn't it.

Mom's Best Macaroni Salad

This was really great! I used whole wheat pasta, cause that's what my family likes, and just omitted the milk all together, leaving the sugar and vinegar the same, and it worked out wonderfully.

Slider-Style Mini Burgers

I made these right on with the recipe and they were AWESOME. I was sure to let the meat sit in the strainer til it got near cold, then wiped the skillet out with a paper towel, then put the meat back in the skillet. I did measure the mayo right on but just winged the shredded cheese (cause you can never have too much IMO). Stirred it up then did like Minn_Girl suggested and just sliced the tops off, scooped out a bunch of mix and slathered it on, then replaced the tops, wrapped in foil and baked. I didn't even use PAM on the foil because I don't keep that stuff in the house, and only the few little pieces that feel between the buns actually stuck to the foil! All 4 of my kids loved them, and I was thrilled! I even used wheat dinner rolls cause that's how we roll in our house and they were awesome. Like others, I may try laying a slice of american cheese or some jalapeno slices or sauteed onion rings on top of the mix before putting the tops of the buns back on. Totally awesome job Minn_Girl! You've just added a favorite to this houses' menu planning!

Alfredo Sauce

Delicious!!! I make this at least once a month with fetuccini, chicken, and broccoli. My whole family loves it. And I just buy a package of shredded "Italian cheese blend" from walmart, since it's SO much cheaper than the grated parmesean. And it still comes out awesome

Peanut Butter Balls V

I can't make these very often because they are so incredibly rich, but they are def. a nice treat- and my husband can even take them to work in his lunch box and have them for a snack 5-8 hours later and they're not mushy.

Tater Tot Hot Dish I

I agreed with the other reviewers- fry up the hamburger with the chopped onion and diced garlic, drain, then put in the bottom of the casserole dish. I actually chopped up about half a large zucchini from my garden and added it to the onions and garlic as they sauteed (before adding the beef to the skillet) mainly just to add a veggie to this dish as it's a meal in itself. It was very delicious! Also, after I emptied the can of condensed cream of mushroom soup into the bowl, I refilled it all the way with milk instead of just half way. I'm not sure how it would have been with just half the milk, but I found the amount of creaminess to be perfect with how I did it. I also did similar to another reviewer and laid some slices of cheddar down- I put mine on top of the soup layer, so it actually went: meat, soup, cheese, tater tots. Then upon serving I added a few grates of cheddar on top of the hot dish once it hit the plate. Wonderful! And the kids LOVED it!

Blue Cornmeal Pancakes

didn't use the pine nuts, did use yellow corn meal, and bleached AP flour, I've never heard of blue corn meal. The texture was a bit odd. The flavor was good, but the texture was just off to me.

Stuffed Peppers with Turkey and Vegetables

I didn't quite understand putting the bellpeppers in the stuffing- the outer pepper was more than enough pepper flavor for me, so I took out the extra. Try adding some cooked white rice to the stuffing!

Fruit Salad in Seconds

good for a fast to make, fast to eat salad. I loved the idea to add the yogurt! Definitely added something to it, but it does get runny quick. The second time I made it I added fresh apples and oranges and about 3 tbsp of sugar. Very good dish!

Soft Breadsticks

These were awesome!! If you roll them a little thicker they'll have more 'softer' middle and a nice hard crust. I doubled the recipe to make sure I had enough for my brood, and I should have quadrupled it! I didn't want to use sesame seeds, and I wanted to make them a little more interesting, so I added 1 tbsp Italian seasoning and 3/4 tbsp garlic powder in before adding the milk. I actually didn't use all the milk and the dough was good- so be sure you add it just a bit at a time so you stop before you have too much. Instead of dipping them into butter, I just painted melted butter on either side and baked. These are great alone, or with a dipping sauce! Wonderful texture and flavor! And fast!

Pumpkin Cheesecake I

I used two cake pans sitting in a cast iron skillet with water to the rim of the cake pan. I also used a graham cracker crust and 2 cups pureed pumpkin instead of the can. This was delicious!

Egg Salad Sandwiches

for me this was just a little bland. I've never had egg salad without relish, so I added some diced bread and butter pickles (I had no actual relish on hand). I also added paprika and omitted the dill weed, mainly because I didn't have any, but I might get some and try next time. Like others I also used fresh chopped onion instead of flakes. I stuck with 8 eggs and just used the rest of te recipe as a guide rather than actually measuring everything. oh, and I used about 1 to 1.5 tsp mustard instead of mustard powder (like you would potato salad) all in all a good recipe with some tweaking.
