Old Bay(R) Shrimp Fest
I followed user suggestions to cook the potatoes for less time - bad idea for me because then my potatoes weren't done when the rest of the food was ready. I think the cooking times will vary by area. Also, my shrimp cooked almost instantly when I tossed them in - maybe 1 minute of cook time for them. I definitely recommend keeping an eye on this while it cooks. Also, due to the amount of spices involved, the steam for this filled my apartment and made everyone cough (even with the doors and windows open, fans on, etc). Perhaps make it outside on a boiler or cover when you are cooking.

Blueberry Zucchini Bread
delicious, moist and flavorful. to make it healthier, i substituted 1/2 cup of applesauce for half of the oil and also mixed in some ground flax seed. i also sprinkled chopped pecans over the top of the batter before baking. oh, and for those who were wondering: 2 cups of shredded zucchini = 2 fairly small zucchini or 1 medium/large zucchini.

Vegan Cupcakes
these are very excellent, although the texture and flavor made me think of muffins more than cupcakes. i recommend trying out different flavorings - these are very versatile. instead of trying to make an icing, i just sprinkled different types of toppings on the batter in the pans before i baked them, such as cinnamon or nuts. also, for a very different twist, tear open about 5 teabags of earl grey tea and mix the tea granules in the batter before baking - it's delicious.
