Simple and Easy Stuffed Peppers

Reviewed: Jul. 28, 2011
Turned out incredibly well. Added salt, pepper, Italian Seasoning and rice. Used a can of fire roasted tomatoes. Accidentally forgot about the chicken broth and cheddar cheese. It all fit into 4 large red bell peppers. Baked for 40 minutes until a good portion of the skin wrinkled. Peppers were too large to fit into the muffin tins I had on hand but used the idea of open air vertical baking by standing them into small loaf pans. Will try it with the cheese next - didn't seem to need the broth, probably because I added partially cooked rice.

Easy to make, great taste - better than any others I've made or sampled. Made with no changes or substitutions

Smoked Salmon Sushi Roll

Great and different taste. For better results, I used 'Mom's Sushi Rice' from this website instead of 2 cups Japanese sushi rice & 6 tablespoons rice wine vinegar.

Baked Brie with Caramelized Onions

Followed recipe. While the taste was good, the concept unique among baked bries but we found it to be on the dry side. It presented well. Really seemed to need a complimentary light tasting sauce.

Super-Duper Chili

Reviewed: Feb. 7, 2009
Easy recipe, tasted good, relatively mild,& presented well overall. I used the slow cooker method proposed by an earlier reviewer. This helped to make it so easy, however, since I didn't stir, the Velveta cubes stayed cubes - tasted OK but looked odd (not very noticeable).

Mom's Sushi Rice

Reviewed: Jan. 29, 2009
Changed nothing, did not use all of the vinegar mixture - should be called Mom's Perfect Sushi Rice. Did spread the rice out on a piece of foil to cool - that worked well, I just used the bamboo paddle to move the right amount of rice onto the nori.

Wonton Soup

Changed nothing - certainly the best wonton I've EVER tasted. This can only be attributed to the recipe and has nothing to do with skill.

Asian Style Meatloaf

Reviewed: Jan. 27, 2009
I found the taste of the meat loaf itself to be mild. Next time I will add some garlic and be sure to chop the onion finer. Baked as 9 mini-loafs with no problems. Used better plain ground pork and did not have to drain fat. I used 1/4 cup soy granules instead of 2 of the 3 slices of bread - worked well.

Out of the ordinary meatloaf - we did find it a little hot and will try it with slightly less hot pepper sauce.

Sausage Egg Casserole

Reviewed: Dec. 27, 2008
Gets five stars for it's ease, versatility, taste, consistency and presentation. Really looks great in and out of the pan. Expected a good 3-4 star but got much better. Even leftovers are worthy of guests! I diced and sauted 2 green bell peppers instead of using the 2 cans of chilies. Also used 1 lb of ground pork with a tablespoon of Italian Seasoning instead of the pork sausage.

Buffalo Chicken Wings III

Reviewed: Dec. 23, 2008
Coating the chicken with a mix of 1/2 cup flour & 1/2 teaspoon garlic powder worked well and is worth doing. The original recipe yielded twice as much sauce as needed. Even with applying only half the sauce, using parchment paper and cooking longer in the last step than called for, the wings were still wet. Note that the wings are even better on the second day!!!!
