I have lived in south Louisiana for about 30-years. I have lived around the country and Europe, but the best eating is right here in Louisiana! Anything can be cooked in oil @ 350 degrees: Catfish, turkey, beignets, shrimp, chicken, sopapillas.....if you can't fry it, boil it! Crawfish, shrimp... Fried turkey at Thanksgiving and Christmas are a tradition in south Louisiana! Crawfish season starts in March (actually earlier, but they are a little small). Do you suck the heads? I have mastered cooking crawfish (crayfish or mudbugs in some parts of the country). I add smoked sausage, mushrooms, potatoes, corn... Well, I just bungled a $1.00 box of brownies...do you know what happens when you leave the egg out????
