Pepperoni Stuffed Mushrooms

All I can say is that everyone at my dinner party last night said these were the best stuffed mushroms they have ever had...be sure to make extra! I would suggest making 3 per person. I bought the larger mushrooms from Costco vs the smaller ones from the grocery store...this made all the difference and were a better price too! Be sure to get fresh pepperoni from the deli...I used Boar's Head...they sliced it in pieces about a 1/4 inch thick so that I could dice it easily. I used two garlic cloves instead of one (used jarred minced). I used garlic herb crackers (TownHouse Toppers) to add some flavor vs just using plain butter crackers. I added extra parm (used a 1/4 cup total) and instead of grating it I used the shredded bagged and put in the mini-chopper. I used chicken broth and thought it tasted great...will maybe try white wine (as others have done) next time to compare. I sprinkled paprika over them before baking to add a little flavor. About half way through baking I sprinkled on some shredded parm...this added a nice flavor to the top. One thing that is very important, as others have mentioned, is to saute AND drain the mushrooms before stuffing them. I did saute them but forgot to drain them afterwards...all was okay but the bottom of the pyrex dish was quite liquidy after I baked them...was no biggy but I would have liked for them to have been less soggy. Fantastic!!!

Hot Artichoke and Spinach Dip II

I had a dinner party last night and this was a great hit! I used whipped cream cheese in a tub instead of a cheese block. I used 1/8c mayo + 1/8c sour cream vs all mayo...the mix of the two made it creamier but not quite creamy enough...next time I will try doing the 1/4c of mayo and 1/8c sour cream...definitely use both though. I bought the bagged shredded parm/romano cheese mix vs separate cheeses. I added extra garlic...about 2-3 cloves total (used the minced jar kind) as I LOVE garlic and used the 1/4 tsp garlic salt. I used a 10oz frozen spinach package and was not too much spinach...be sure it is dry though...if you want more artichoke taste just cut it down a bit. Also did a pinch of cayenne...could have added a little more. I cooked it in a brownie size pyrex dish and then transferred it to a serving bowl and served it with tortilla chips. (As someone mentioned earlier, it is better to bake it in a shallow type pan vs a bowl...it seemed to cook better). Next time I will try adding scallions and lemon juice as others have done....but even without these last two ingredients this dish was awesome! Oh, I almost forgot...put all of the ingredients in a food processor (I used my mini-chopper) after all together...this really marinates the flavors and makes it nice and chopped. Also, I made it the night before and then took it out of the fridge about an hour before baking. Fantastic!

Tomato and Mozzarella Bites

I had a holiday dinner party last night and this was one of the apps I served...what a hit! I highly recommend using marinated mozz balls (got mine at Costco) and use the whole ball. It would not have been as tasty with just plain mozz balls. Instead of the dipping sauce, just sprinkle balsalmic vinegar on the finished platter before serving. I did not sprinkle cheese on top...seemed like it would be overkill. The marinated mozz balls did the trick! The only other thing I would recommend is make extra...25 for 10 people was not enough...plan on each person eating four of them (so make 40 for 10 people)!
