Grandma's Five Cup Salad
Delicious, but double the recipe if you're feeding a crowd. There is no way this is 8 servings as is, unless everyone's only taking a few bites. I also add maraschino cherries.

Roasted Chicken with Risotto and Caramelized Onions
This was pretty good, but the balsamic vinegar was definitely way too overpowering. I would cut it to 1/8 cup next time.

Delicious Black Bean Burritos
These are delicious and best part, easy. I added 1/4 cup frozen white corn which added great crunch and a little sweetness. I used reduced fat cream cheese. We served some lime-grilled shrimp on the side with margaritas, of course! Will be making this again.
