Restaurant-Style Potato Salad

I come from a family in which my mother's (now deceased) potato salad is legendary. I was surprised by how good and simple to make this one is. I did increase the onion, grated carrot and celery and added hard-boiled eggs, but I don't think it changed the flavor overall with these additions. Great recipe, Mary Ann!

Spiced Banana Cake

I wasn't so impressed..., Not a bad recipe, but I think I'll save my overripe bananas for a banana bread or the Banana Crumb Muffins on this site which are fabulous.

Passion Bars

After seeing other's issues with spreading the peanut butter/condensed milk mixture I thought that the bars would be more easily prepared in my food processor. It worked great. Another change I made was to add 1/3 cup of cream cheese and 1 tsp. vanilla to the peanut butter/milk mixture in the food processor. I store the cooked bars in the refrigerator so it keeps longer and that helps with the crumbly top layer, as well. Great dessert with these changes.

Pet Cookies

All the baby food jars I've found are 4 oz. so I did use this recipe and formulated my own, using 1 cup of wheat germ, 1 egg, 1 cup whole wheat flour and 1 cup of 10-grain pancake mix and the 3 4-oz jars of sweet potato baby food. Just a note: as there are no preservatives these can develop mold easily, I had to toss some of my last batch.

Ham and Bean Soup II

As other reviewers noted, I also replaced most of the water with chicken broth. I also added two cans of navy beans as I thought it was thin and needed more and didn't have time to wait to soak more beans. I ran one can through the food processor and just added the other can as is. I added more carrots and celery and instead of slicing them as I did the other veggies, I chopped them in the food processor. After adding more spices including some bacon salt, I ended up with a great soup. Really good and a huge batch of soup.

Pineapple Cookies I

I probably didn 't drain the pineapple enough and so got a more cake-like cookie. I didn't feel like adding the raisins and added dried cranberries instead. I substituted about 1/2 cup of whole wheat flour for some of the all-purpose flour. We really liked the cookie, probably not as much if it had been a more chewy cookie, but as I mentioned that was probably my fault. I'll drain the pineapple more next time.

Spicy Sausage and Rice Casserole

I try to not revise recipes when I make them the first time, but I broke that policy with this recipe. I had already purchased chicken sausage from Sunflower Market and had that on hand. My husband stated he didn't feel like rice so I substituted Rice Pilaf (okay, so it is still rice!) and made the rice with chicken broth. We didn't have alot of time so I made everything on top of the stove and mixed in a large sauce pan instead of baking it as a casserole. It was very good and I will make it again. Also, I reheated leftovers in the microwave with some grated Mexican mix grated cheese. Really good!

Crunchy Apple Muffins

I doubled this recipe and as I did not have any granola on hand, I substituted some oat flake cereal that I crushed. Good recipe. I think next time I need to use an apple with more tartness. Great topping!

Banana Crumb Muffins

Wonderful, versatile muffin recipe. I also made just the topping for a Cinnamon Supper Cake also on AllRecipes. I will be making this again today although I made a double batch yesterday as my very tall Doberman got to the muffins as they were cooling on the counter and ate 11 of them. I was furious with him, but he seemed to love them too. I will put them out of his reach from now on. Additional comment 06/08/09: Made these again and kept them away from pooch this time. I used a jumbo muffin tin and got six large muffins. I also substituted 1/2 cup of the flour using whole wheat trying for a more healthful version. Also, my husband works as a produce manager in a grocery store, you can ask for overripe bananas at most grocery stores and they'll even discount them for you instead of having to wait for the bananas to get to overripe stage.

Scalloped Potatoes and Onions

05/06/09- Easy to make and didn't even have to go to the grocery store before preparation as I had everything on hand. What a easy and impressive potato dish. Loved it! 09/08/09- I have made these several times since my review in May. I usually add 1 or 2 potatoes and double the sauce portion of the recipe using half and half or milk instead of doubling the amount of chicken broth. It makes for a creamy and tasty potato dish and so easy. I don't think the 2 hour baking time is really needed, a little over an hour usually does it.

I used whole wheat flour and probably shouldn't have. Also, I added an egg. I think my s/o liked these more than I did since he practically ate them all in one sitting. I used a European berry mix preserve that suited the recipe really well.

Cinnamon Crisps

I'm glad I ignored the prior reviews, I really liked these cookies. I did substitute oat flakes cereal for the cornflakes. The cereal was also a cinnamon flavor with raisins, but the recipe gets a big thumbs up from me.

Banana Oatmeal Crumb Cake

Excellent snacking cake. Came out great. Will make again. The only revision was to accomodate for Denver's altitude. Making the second time, I didn't want the crumb topping so I made a cinnamon syrup from another cake recipe on this site poking holes in the cake for the syrup to penetrate the cake. Liked it even better without the crumb topping.

Peanut Butter Cookies X

These are tasty and easy. I always wondered why most peanut butter cookies didn't have actual peanuts added. I love the crunch that the chopped peanuts provide. I made the recipe as written except for deleting some of the baking powder because of Denver's altitude.

Savory Rice Pancakes

I doubled the recipe and test-tasted the first one off the grill. Really nice flavor although I had trouble getting the "pancakes" to stay together in the pan. I stacked the rest of them with plastic wrap between each one in the fridge so they can be a quick breakfast or snack later.

Peachy Bread Pudding with Caramel Sauce

04/02/09 I had been wanting to make this recipe for awhile as bread pudding is my ultimate comfort food dessert. Unfortunately, on a cold and blizzardy day in Denver I realized I didn't have any peaches so I substituted pineapple chunks. It turned out great. I also added 2 more eggs than called for in the recipe and the custard turned out perfect. Not too soupy at all. Additional note: I had some very ripe peaches that needed to be used and I was able to make this recipe as written. Fabulous! I added 3 more eggs than called for and also used half and half. I think the more eggs are needed in the original recipe. Wonderful sauce too.
