My favorite things to cook
Lasagna from scratch a.k.a. no spaghetti sauce. Broccoli cheese casserole from an old family recipe. I love to bake ANYTHING!!!! Cooking or baking anything with my Mom, she taught me how to cook and we still find inspiration to try new things.
My favorite family cooking traditions
Making sugar cookies for christmas with my Mom has always been my favorite tradition. As well as our oldest tradition. However trying new things and hanging out while we make them is our new favorite past time now that I can comprehend the art of cooking.
My cooking triumphs
When I was a little girl learning to bake things. When I was a teen making dinner on the rare occasion that Mom was working late. When I was in college making all my meals from a coffee pot and a microwave. (its harder than you think!) When I got married cooking tasty meals for my husband. And my latest and greatest triumph was finally getting my Kitchen Aid stand mixer!!!
My cooking tragedies
The first time I tried to make taco's (as a teen my first time cooking for Mom). And just today trying a shortcake recipe... only a tragedy because the directions were fuzzy, so was I, and I was expecting something different.

Salsa Chicken Rice Casserole
I really like this recipe. I think it is easy to adapt to what you have in your cupboards. Today I am going to make it with spanish rice and a little more chicken. I don't have any cream of chicken so I will use cheddar cheese soup and cream of mushroom. I will be able to cut out some of the shredded cheese that way. And I haven't decided on salsa or canned rotel tomatoes. I haven't used salsa in this recipe yet. I always always always season the chicken. I chop it up before I cook it and then cook it in a skillet with some onions and whatever spices tickle my fancy. A lot of people have been saying it is bland, it is probably because there really isn't any actual seasonings in it. I really like the thought of eating it with taco shells or wrapped in a tortilla as a burrito. I think that is how we will eat the left overs. :) Happy Eating!!!

Robbi's M&M Cookies
Awesome Recipe!! I am very glad I found it. I used dark brown sugar instead of lt. and they turned out delicious, with a beautiful caramel color. Very good cookie!

Congresbury Ginger Shortcake
Tasty but recipe has issues. Either it needs more liquid to make it a "firm dough" Or it needs to be changed to something that specifies it is not a dough but more of a graham cracker crust consistency. It didn't form a dough at any point. Recipe is slightly misleading and that is annoying. Like I said good tasting shortcake though.
