About this Cook
I'm a full-time working single mom of 2 boys - a teenager (11/93) & and an infant (7/08), so unfortunately I really don't have a lot of time to spend in the kitchen. I've only recently started to really take an interest in cooking things that were not already prepared or semi-prepared (boxes, jars, cans, frozen). Now I will still use those things from time to time but add to them!

A little bit of everything! Really like the quick and easy recipes that taste like they were a lot of work :)
My favorite family cooking traditions
hmmm, hamburger stuffing in the turkey would have to be one. The variety of cookies mom always made (still does) at Christmas. Mom's meatballs, baked beans, coleslaw are a few things that I can remember everyone asking her to make for different parties and still do to this day. And now I am taking those recipes and making them too and being requested to make them again and again!
My cooking triumphs
My 1st Thanksgiving turkey in 1992 - was so 'pretty' (and tasted good too) that my mom took a picture of it! Recently, Extreme Banana Nut Bread (recipe from AllRecipes) that I made into muffins which did not last very long!
My cooking tragedies
The first time I made Snickerdoodle cookies and only used 1/2 the amount of butter I was supposed to - they were hard as rocks). Oh and of course burning things....but who hasn't done that?!?! hahaha

Crab and Swiss Quiche
I made this for dinner tonight and it was great. I also used 3 eggs, about 2 cups of cheese and added some chopped spinach. My 16 yr old said it was GREAT and my 1 yr old even ate it too! The base of this recipe will become a staple in our home!

Scalloped Potatoes and Pork Chops
This was really good, but I think next time I will do like the others and mix the potatoes, onions & cheese or maybe layer the cheese & potatoes in the pan before adding the chops. Even so this was wonderful and very filling - I will definitely be making this dish again!

Extreme Banana Nut Bread 'EBNB'
AWESOME!! This was the 1st time I made banana bread and I am so glad I chose this recipe. I used pecans instead of walnuts and 1/2 brown & 1/2 white sugar. Everyone loved this recipe. I made muffins and baked for about 18 minutes and they came out perfect. YUMMY! But they are very addicting!
