Pumpkin Cookies V

These were fabulous!!! and what's even better is that they work well with substitutions for those who have food allergies. I substituted gluten free flour mix for the all purpose flour( I use 2 cups brown rice flour, 1 and 1/2 cups potato starch, and 1/2 cup tapioca starch), for the two eggs I substitute 4 Tbs. sweet potato baby food ( I know, weird, but it works great!), and I used Spectrum non-hydrogenated shortening. they turned out absolutely delicious. I haven't even put the frosting on them yet, and they're great :) thanks for the great recipe!!

Strawberry Spinach Salad I

my review is only for the dressing, as I had to substitute for what I had on hand for the actual salad. the dressing is fabulous! i used the amount of sugar it called for as I think it works well for these types of salads. I think this works well substituting dates and apples for the strawberries as well!

Cool Cucumber Salsa

this is a wonderful summer salsa!! It tastes so fresh and light. I've made it several times now from fresh veggies from my garden and it has received rave reviews every time. this year we've planted parsley and cilantro and I'm really looking forward to trying it with the fresh herbs from the garden instead of the store!

Raspberry Thumbprint Cookies (Cookie Mix)

I made these for a friend's wedding and they turned out wonderful. so elegant yet so easy! I didn't use the sugar on top, I thought they looked just as nice with just the melted chocolate. I used raspberry preserves on half the batch, and apricot preserves on the other. both were delicious!!

Microwave Baked Apples

I had never before thought of making baked apples in the microwave, what a great idea!! I sliced mine and sprinkled with truvia sweetener and cinnamon. left out the butter to make this a delicious, healthy snack.

Zesty Tomato Soup for One

Potato Chips

after experimenting with this recipe a couple times (which is so versatile!) I've discovered that Yukon Gold potatoes make the BEST potato chips I've ever had using this method! I used pam spray instead of the bag method just to save time and I had to microwave mine for about 5 to 5 1/2 minutes and I have a very powerful microwave. I just cut mine thin using a sharp knife. They turned out great even without being super thin. thanks so much!

No Bake Cheesecake II

very, very good! I can't imagine how delicious this recipe would be if made as the recipe states, but to save quite a few calories, I used 1 package fat free cream cheese, and 1 package light cream cheese, 1/2 cup splenda instead of 1 cup of sugar (which was plenty sweet for me, but that's a personal preference), and light whipped topping. I used a store bought reduced fat graham cracker crust, which I wouldn't have done had I not been pressed for time, and let me tell you, this was wonderful!!! I may even use all fat free cream cheese next time, because with the sugar added you can't even tell the difference!

Home-Style Scalloped Potatoes

The first time I made these they turned out pretty good. But the second time I made some modifications and they turned out fabulous! I use 2 cups of heavy cream and 3 cups milk to equal 5 cups, 3/4 cup onion instead of 1/3, and more salt than calls for. I don't really measure, I just add more until it tastes flavorful enough for me. My husband LOVES when I make these and tells me they are the best he's ever had. Thanks for sharing!

Honey Mustard Salad Dressing

so yummy!! I'm sure this recipe is fantastic as is, but unfortunately I was out of onion and parsley. so I made it without it and it seemed a bit thin. I had some prepared honey mustard in the fridge and added it in for thickness, which gave it a great flavor and texture. thanks for the great recipe!

Dairy Free Chocolate Pudding

This was soooo yummy, AFTER it was chilled. before it was chilled it was very bland so I definitely recommend letting it sit in the fridge overnight. I added a couple tablespoons more sugar than it called for and added some dairy free chocolate chips because I think it lacked the chocolate flavor that I was craving, but that was a personal preference.

Baked Bar-be-que Chicken

This was a wonderful way to make bbq chicken without the grill. I used boneless chicken breasts and cut the cooking time in half. I also used Buzzsaw's BBQ Sauce recipe from this site which worked out beautifully. The chicken was tender, moist, and flavorful, and even my dark meat loving husband raved about it!

Basic Pizza Crust

very good. I love how simple and easy it is to make. I did have to add a little more flour than called for to get it firm enough to roll out. I thought the first time I made it it was a bit bland, so the second time I added some basil and garlic powder, and brushed some olive oil and parm. cheese on it before baking. yum!

Delicious Gluten-Free Pancakes

These are excellent!! I can't believe I can finally enjoy a gluten free pancake that doesn't taste gluten free! I was out of potato starch so used corn starch instead, and I did add about a 1/4 cup more tapioca flour to thicken up the batter a bit. I used a teaspoon of regular sugar instead of the sweetener. so delicious!!

Hasty Chocolate Pudding

so simple and delicious! I hate serving my kids instant pudding due to the artificial flavors and colors, and now I can make quick and easy chocolate pudding for them with ingredients I always have on hand. thanks! update: I made this today to satisfy a major chocolate craving and decided to freeze it...it was to die for!!! I highly recommend trying it this way for a refreshing summer treat! It reminded me of a frozen pudding bar... yum!! I used half rice milk half skim milk and it turned out wonderful!

Brownies-Allergy Free!

okay, no brownie that does not contain eggs or gluten is going to taste like the real thing, so I wasn't expecting them too. These did come out rather tasty though. I did cut back the oil to 1 cup and used 1/2 cup applesauce. it was not too oily this way, but next time I may sub even more applesauce to make them a little healthier. we've tried these with and without chocolate chips and the chocolate chips version wins hands down! If chocolate is a problem, you can also make these with carob powder which is usually found in health food stores and some grocery stores.

Best Chocolate Chip Cookies

Best chocolate chip cookies I've ever made!! I get requests for these constantly. I bake mine on a pizza stone which makes a HUGE difference. I think the trick to getting soft cookies are to take them out of the oven before they look fully done. this way as they cool they keep that chewy texture that makes chocolate cookies so delicious! I bake mine for about 13 minutes on the pizza stone and they turn out perfect every time!

Mock Tuna Salad

This was great! I've never been a fan of tuna, or any seafood for that matter, but for some reason I've been craving tuna salad (pregnant) but am not allowed to eat it because of the mercury. This was a great alternative. I admit, I don't really think it tastes like tuna, but it's so much better for you, and tastes great on toasted bread!
