About this Cook
I'm a wife and a mom to three great kids, ages 7, 2, and 3 months. My 2 year old has food allergies, so I'm always looking for great dairy, and gluten free recipes that don't require tons of expensive extra ingredients. I LOVE to cook and bake but am usually challenged for time due to raising my children and working a part time job for my church as the worship leader and treasurer, so AR has been so helpful!
My favorite things to cook
I love to bake just about anything. I love cooking italian dishes, and I've been experimenting with asian. Lasagna and pasta dishes are always fun and just about anything that will get my picky kids to eat is a triumph in my book!
My favorite family cooking traditions
I still use my grandmother's recipe for banana bread and it gets rave reviews every time. My dad tells me that I'm beginning to cook more and more like her every day which is a huge compliment!
My cooking triumphs
I cooked Thanksgiving dinner for 10 people this year by MYSELF and I was very pleased with the results. The turkey alone was my triumph since it was the first year I cooked one but I was happy with how everything turned out. I'm pretty much happy any time my husband raves about a meal I've made :) That's the best reward of all!
My cooking tragedies
I once cooked a chicken pot pie for dinner which took me over an hour to prepare, and it pretty much exploded in the oven because I used too much filling! There are many others as well, especially with the gluten free cooking :)

Pumpkin Cookies V
These were fabulous!!! and what's even better is that they work well with substitutions for those who have food allergies. I substituted gluten free flour mix for the all purpose flour( I use 2 cups brown rice flour, 1 and 1/2 cups potato starch, and 1/2 cup tapioca starch), for the two eggs I substitute 4 Tbs. sweet potato baby food ( I know, weird, but it works great!), and I used Spectrum non-hydrogenated shortening. they turned out absolutely delicious. I haven't even put the frosting on them yet, and they're great :) thanks for the great recipe!!

Strawberry Spinach Salad I
my review is only for the dressing, as I had to substitute for what I had on hand for the actual salad. the dressing is fabulous! i used the amount of sugar it called for as I think it works well for these types of salads. I think this works well substituting dates and apples for the strawberries as well!

Cool Cucumber Salsa
this is a wonderful summer salsa!! It tastes so fresh and light. I've made it several times now from fresh veggies from my garden and it has received rave reviews every time. this year we've planted parsley and cilantro and I'm really looking forward to trying it with the fresh herbs from the garden instead of the store!
