Brooke's Best Bombshell Brownies

Reviewed: Feb. 28, 2010
These Brownies are amazing! I've been following the suggestions and using 1 1/2 cups white sugar and 1 1/2 cups dark brown sugar. I would also recommend using a high quality cocoa powder. I made a batch with a store brand, and then a batch with ghirardelli cocoa. The difference is very noticeable. Any high quality cocoa should produce the same results though. These are pretty fool-proof. Try them, you won't go back to another recipe.

Tuna Noodle Casserole from Scratch

Reviewed: Oct. 21, 2009
I've made quite a few adjustments to this recipe and my family keeps requesting this, so I guess they're working. I've tripled the amount of mushrooms and omitted the peas. Next,I used only one cup of skim milk to the roux then I've added half of the cheese to the roux, right before I add the tuna and mushroom mixture. I added in a cup of sour cream instead of the second cup milk. Finally, I've used townhouse crackers for the topping because they are buttery, allowing me to cut down the butter in the topping. I used extra-sharp cheddar for the cheese. The casserole comes out creamy, but not heavy, chunky with mushrooms, and savory with the sour cream. This is a winner in my book!

Curried Coconut Chicken

Reviewed: Oct. 15, 2009
I love this recipe. I have used cubed boneless skinless chicken breast and also thighs, skinless, but with the bone. Both are very good, but I think the thighs are much juicier and have more flavor. I also added a cup of peas just as the sauce was thickening,so they were not over cooked. You really can't beat how easy this is.

Mushroom Orzo

Reviewed: Oct. 15, 2009
This was really good. I didn't have pearl onions, so I used a medium onion, roughly chopped. I also didn't have any wine, I replaced the wine and the water with chicken stock. I used 2 portobella mushrooms, roughly chopped (it was way over a 1/2 cup, but they cook down a lot). This is a very rich recipe, so I would suggest cutting the butter to about half. If it is still too rich, I would suggest cutting the cheese at the end to about a 1/4 cup.

Balsamic Roasted Pork Loin

Reviewed: Jul. 23, 2009
This was a super simple recipe. I didn't have enough balsamic vinegar, so i used a 1/4 cup of honey. I also didn't have enough steak rub, so I used some salt free grilled chicken seasoning. I grilled the pork loin over medium heat for 55 minutes, turning it after the first 10 minutes to sear the juices in. This turned out so juicy and tasty, I will definitely be making this again.

Sourdough Bread

Reviewed: Jan. 9, 2009
This is a very versatile recipe. I made one half in a loaf pan and the other as a round bread. They both turned out wonderfully with a light, airy texture and a light sourdough flavor. I changed this recipe to suit my needs a bit. I did not have milk powder, so I added 1-1/2 cups milk in place of the milk powder and remaining water. It tasted wonderful and raised very well both times. I will make this again, and pass it on to everyone I know!
