Dave's Low Country Boil

Amazing recipe. My family loves it. I only made two small changes from the recipe posted: 1) I cooked in the crockpot so it would be mostly ready when we came home from church 2) added about 1/4 tsp more chicken seasoning. I barely fit all the dough for the dumplings, so next time I will reduce that some. Wonderful, wonderful food!

Awesome and Easy Creamy Corn Casserole

Pennsylvania Coal Region Barbecue

I wanted to surprise my husband with a "hometown" dish (he is from Scranton, PA). I followed the recipe except I used tomato paste instead of ketchup and it turned out excellent. We will definitely be making this again.

Black Bean and Salsa Soup

Really easy, really delicious. We topped ours with grated jack cheese. I think next time I will use three cans of beans and a little more salsa.

Mexican Rice II

I substituted canned enchilada sauce for the tomato sauce to "kick it up" a bit. Also, I used vegetable broth instead of chicken broth and it tasted just fine. This is an easy, delicious recipe.
