Both my mom and I have made this dish twice within the past month! In this dish I used red onions rather than yellow onions (I think reds are the best, and I had them on hand anyway), a generic pie shell (next time I'll get a better one - it was great, but I kept craving something more buttery and flaky), and I substituted a fresh farmer's market pesto for the herbs, which I mixed in a bowl with the diced tomato before adding it to the pan. I must say, I'm a total carnivore, but this was truly extraordinary. The Frank's hot sauce I added to the cheese mixture gave it an extra kick (I also used a mixture of sour cream and Miracle Whip in the topping because I dislike mayo). This recipe is a classic - try it!
