Slow Cooker Thai Peanut Pork
this recipe was very tasty but I had issues with the pork--the suggested time for it to cook was way too long and left it dry and flaky...everything else was great though and I didn't have the salt issue like others since I used low sodium teriyaki sauce...and there was a ton of sauce left over so I cooked up some noodles and now have a nice thai noodle dish for lunch! I will definitely try this again but over a weekend when I can watch the pork and make sure it doesn't get overcooked!! I recommend trying--the sauce was just like at a thai restaurant!

Delicious Black Bean Burritos
the name of this recipe is spot-on cause these burritos are DELicious!! I doubled the recipe and did alter it a bit based on suggestions and what I had--I added a can of tom and green chiles, didn't have any cilantro (don't like anyway), cooked up some 90 sec spanish rice to add in, used less fat cream cheese...I've made these three times already and always have a few burritos left eventhough my fiance eats a ton--they're very filling (esp when you add a little rice!) and SO satisfying!! AND they are easy on the wallet!! I will be making these forever!!!

Shrimp, Broccoli, and Sun-dried Tomatoes Scampi with Angel Hair
Thanks to all of the reviewers, this dish was a five star for me!!! I added more garlic, sauteed the broccoli and added some white wine at the end and it was FANtastic!! I even left out the butter to be healthier and it was still that good! I also served it over rice pilaf which is always my route with a scampi--it seems to soak the sauce better and everything gets really happy together! YUM!
