Pumpkin Black Bean Soup
Quick & EASY!!! I had to improvise many of the ingredients but it was still great!! I only had 2 cans of black beans so I pureed one with liquid from can and left the other whole. I also made it vegetarian by adding 2 cans of vegetable broth. I added scallions and seasoned with pepper flakes and a dash of nutmeg. I left out the vinegar all together. A dollop of sour cream and it was delish!! thanks for such a quick soup can't wait to taste it tomorrow!

Pomegranate Relish
I have not made this recipe yet but I have an easy way to seed a pomegranate. I carefully take off the top of the pomegranate without hitting the seeds. With a very sharp knife I score the fruit into quarters again without cutting too deep. In a large deep bowl, take the pomegranate and pull apart over the bowl. Take each quarter and place it skin side up in one hand with your fingers open. In your other hand, take a wooden spoon and whack the skin side of the pomegranate. The seeds just fall out. Don't be afraid to hit fairly hard. You will be amazed how quickly the seeds fall out and the rind just stays on the skin. You may have to still pick a few seeds out but this is so simple. Have fun!!

Italian Torte
Love this recipe! This may be the only time I ever say add just one clove of garlic. I am a garlic-aholic and put in several ... I have to say it may have been a tad too much! other than that I used my medium square pampered chef bowl and it looked great! I sprinkled fresh parsley around (I hate cilantro)and a little paprika for color! I have also used several blades of chives tied in a bunch also looked great!! BTW I have also substituted roasted red peppers for tomatoes and it was yummy!
