Almond-Topped Fish
this recipe is a family fave at our house (my mother even loves this dish, and she HATES fish)! I usually use frozen tilapia filets (straight from the freezer) and bake it for ~35 mins. in summer this recipe transitions very nicely to foil packets for grilling: use heavy-duty foil; spread a bit of olive oil on the foil; layer the onions, fish, sauce, and almonds; fold top and ends of foil over, leaving room for heat circulation; grill on rack over ~325F heat for ~18 mins (for frozen filets; ~12 mins for fresh or thawed). I thought my DH was going to lick the foil!! {G}

Quick and Easy Alfredo Sauce
delicious and easy! even my DH, who doesn't like white sauces, gave his compliments to the chef ;) to prepare this sauce, I halved the recipe and it fed my family of 5 quite nicely. as other reviewers suggested, I did add a dash of nutmeg; I also added 1/8 t of dry mustard, used white pepper instead of black, and subbed heavy cream for half of the milk. I tossed the sauce w/vermicelli and fresh spinach and topped each serving w/a sprinkling of pine nuts - my whole family, including my kids, gave this two thumbs up! it's a keeper! :)
