Cottage Cheese Chicken Enchiladas
MAN these were good!! I didn't change a thing. My boyfriend, who can be a picky eater, absolutely loved them! I now make them almost every week. Great recipe and pretty easy.

Baby Back Ribs
Nothing wrong with using bottled BBQ sauce, just use good brand...I used Jack Daniels. I did change the method of cooking the ribs after much researching. No marinating necessary!! I preheated oven to 300, then lined a 9x13" pan with foil (for easy clean up). I coated ribs with BBQ sauce top and bottom and layed in pan. Then I covered the pan tightly with foil (My pan was deep enough that the foil wasn't touching the ribs at all). I baked my ribs for 2 hours and 15 minutes total. After one hour I flipped them. Then after the second hour I flipped them back over and left them uncovered for the last 15 minutes to brown a little. I basted the ribs about 3 times the entire time. They came out super juicy and falling off the bone!!

Guacamole
Best homemade quacamole I've ever made. Left out the cayenne pepper and minced garlic (actaully forgot to put the garlic in) but added a little cumin and garlic powder for some added flavor. Let it sit in fridge for about a half hour for flavors to meld and that was just fine. Also note that by leaving the avocado seeds in quac will keep it fresher and from turning brown...I left 2 seeds in there as well as made sure plenty of lime juice.
