Chipotle Honey Roasted Peanuts

Reviewed: Dec. 20, 2009
I took the advice from someone else and omitted the spicy ingredients to make just honey roasted peanuts. The only reason I gave it a 4 was "about 30 minutes" was too long. I only baked them for 22 minutes, while turning then every 7 to 8 minutes and they still were a little burnt. They were tasty though, so I will certainly make these again!

Bratwurst Potato Skillet

Reviewed: Dec. 19, 2009
I didn't really enjoy this, but my husband did. I followed the recipe pretty close, but took the advice of others and used lemon juice instead of the OJ because I didn't have any. I also added 5 cloves of boiled garlic (smashed in a garlic press) and 1/4 cup of ckn stock to the potatoes because they were still a little hard after 6 minutes. There also wasn't enough sauce to coat the whole dish.

Nanny's Goulash

Reviewed: Dec. 19, 2009
This was alright. I didn't see the difference between this and a thin pasta sauce. Only changes I made were ground turkey for the beef, no mushrooms because my husband hates them, added in fresh garlic instead of garlic salt and green beans for the zucchini. It was just too bland, but I saved it by adding extra paprika and basil, plus pepper and a tad of cayenne. I probably won't make this again.

Baked Sesame Chicken

Reviewed: Aug. 29, 2009
This was very yummy! It was sooo easy to make! I only made 2 chicken breasts because I wasn't sure if I would like it, but it was delicious! The chicken was moist on the inside and had a little crunch on the outside from the sesame seeds. The seeds didn't stick very well, so after I put them on the baking sheet, I threw a few more on top! The only thing I added was 1/4 tsp of garlic powder to the dry mix. Thanks for a super simple and yummy dish!

Company Couscous

Reviewed: Aug. 29, 2009
I loved this recipe!!! My husband had never had couscous before and he ate the entire pot of this!! (I did cut the recipe to only 3 servings!) The only changes I made were: I used whole wheat couscous, chicken stock instead of water, extra garlic, yellow onion instead of green and omitted the tomatoes because my husband doesn't really like them. I served them with my Cumin Meatballs...absolutely delicious!! I will certainly make this again!

Oatmeal Peanut Butter Bars

Reviewed: Aug. 26, 2009
These were super delicious eventhough I made a few changes. I replaced the corn syrup with honey, didn't use the sesame seeds because I didn't have them and omitted the chocolate chips, but added extra raisins. I cut them into granola bar length, wrapped them individually for an easy on the go breakfast! I will definately make these again! Oh I also crunched up about 1/3 cup of peanuts because my husband loves them. It gave them a crunchier texture!

Creamy Parsley Veggie Dip

Reviewed: Aug. 5, 2009
I followed the recipe exactly, but I cut it in half and it didn't have any flavor except for the mayo and mustard. I had to add extra parsley, fresh basil, an extra clove of garlic and a roasted bell pepper seasoning. With all of that added, it tasted alright, but was still way too thick. I won't be making this again.

Aussie Chicken

Reviewed: Jun. 8, 2009
Hello!!! This was delicious!!! I made a few changes, but mainly stuck to the recipe. I used turkey bacon and after cooking it, I sauteed peppers, onion and garlic in the grease and omitted the mushrooms. I added some cayenne pepper to the season salt because we love spicy food! I then cooked the chicken in the same pan. By using one pan, you get all the flavors of the dish. For the sauce, I reduced the amount of corn syrup to 1 tsp. and used mircle whip instead of mayo. I topped the chicken in the dish with the sauce, then bacon and veggie mix, then Jack cheese! Sooo yummy! I will surely make this again!

Jo's Rosemary Bread

Reviewed: May 7, 2009
I thought this dough was going to kill my bread machine!! It was squeaking and shaking, which has never happened before! I saved it by taking it out after the first knead and let rise in my warm oven. I then baked it at 375 for 30 minutes as someone had suggested. The only changes I made were milk instead of water, applesauce instead of oil and topped it with parm cheese. Overall it was very yummy, but I almost lost my bread machine...no loaf is worth that!

Cajun Chicken Pasta

Reviewed: May 5, 2009
Fantastic flavor!! I had to give it a 4 because the sauce was way too thin! I had to put in about a 2 tbsps.to the sauce to get it to thicken, plus let it simmer for 20 minutes to get it right! Other than that, the chicken was delicious! I doubled the cajun spice and added a little flour to make sure it would coat well. I also used fresh garlic and jalapeno to add more of a kick! I will make this again!!

Mexican Chicken Corn Chowder

Reviewed: May 4, 2009
Oh so yummy!! The changes I made were: cooking spray instead of butter, Fat Free Evaporated Milk for the half & half, diced jalapeno instead of hot sauce, chicken broth for the water/cube mix, added green peppers, diced carrots, a can of regular corn and an extra clove of garlic. It is super yummy!!!

Cheddar Baked Chicken

This was super yummy and easy!! I omitted the butter and the cereal because I didn't have it and upped the amount of breadcrumbs, plus added some parmesan cheese to the mix! I put it on top of spaghetti and my famous italian sauce! Super delicious!

Frank's Famous Spaghetti Sauce

Reviewed: Apr. 24, 2009
A very good sauce and the only reason for the 4 is I had to make some changes. I took the advice of others and added a 1/4 tsp. of basil and oregano, a tbsp. of brown sugar and a bay leaf. I also added only 1 can of stewed tomatoes, 1 can of tomato sauce, only 2 tbsp. of tomato paste, 1 tbsp. of Worchestire, 1/2 a jalapeno diced and 1/4 tsp. of crushed red pepper. It was oh so yummy! I even made it without meat and put it on top of breaded chicken breasts! I will make this again...but with the modifications I did!

Zippy Shepherd's Pie

Reviewed: Apr. 16, 2009
Very yummy, but I made quite a few changes. First of all, I used ground turkey. I didn't have soy sauce, curry powder or tomatoes, so I added a 1/4 tsp. paprika and sage, plus 1/8 tsp. of nutmeg. I didn't use frozen veggies, but I did use canned corn and green beans. (Added them right before I put it in the oven.) I chopped up fresh carrot to saute with the meat and other veggies. I added extra garlic into the potatoes and had to add an extra tbsp of cornstarch to make it thick. The recipe doesn't tell you what type of pan to bake it in so I just made it in an 8x8...alittle too thick, but very yummy!

Peanut Butter Heaven

Reviewed: Apr. 16, 2009
Pretty darn yummy!! I agree that they are a little thick, so next time I will make these in a 11x17 pan. I too had to cook them about 15 minutes longer than suggested. I suggest using more peanut butter with the chocolate because I couldn't really taste it. Also I didn't have enough chocolate chips, so I broke up some Hershey's milk chocolate bars and it worked! I will certainly make these again!

Whole Wheat and Honey Pizza Dough

Reviewed: Apr. 15, 2009
This recipe was amazing!!! The only changes I made were adding italian seasing to the dough and I didn't have wheat germ so I add an extra 1/4 wheat flour! I turned the oven on 500 for a couple of minutes. Then turned it off and put the bowl of dough in it to rise. Super simple and very yummy!!

Chewy Brownies

Reviewed: Apr. 12, 2009
I followed the advice from the comments and upped the cocoa to a 1/2 cup. I also replaced the 1 cup of oil with applesauce. I put a pinch of cayenne and a 1/4 cup of coffee to enhance the chocolate flavor as well. I threw in peanut butter chips and unsalted crushed peanuts! Thank goodness I did, otherwise these brownies would have had no flavor! I think I am being generous by giving it 3 stars and that is only because they have a fantastic texture. That's not enough for me though, so I won't be making these again!

Rosemary Au Gratin Potatoes

Reviewed: Apr. 11, 2009
These potatoes ended up tasting good, but I gave them 3 stars because if I hadn't added 2 extra cloves of garlic, extra parmesan cheese, sauteed onions and some shredded mozz cheese on top right before the potatoes were done, I don't think they would have had much flavor. I also had to redo the rue/roux because the amount of flour the recipe called for was way too much. It just ended up being a big clumpy mess. Overall though mine turned out pretty good and I cut some of the fat by using fat free evaporated milk instead of half & half. I will make these again, but with the modifications I had to make!

White Bean Chicken Chili

Reviewed: Apr. 8, 2009
Yummo!! I just made this for my husband last night and he raved about it! I took the advice of some of the others comments and also added some other things that we love. We love garlic in this house, so I doubled that. I also added 2 stalks of celery, 1 orange bell pepper and a jalepeno. I traded a 1/2 tsp of paprika for the corriander. I also took 1/3 of the beans and mashed them before putting them in, just to make the chili thicker. Like many others, I used green enchilada sauce instead of tomatillos and used canned corn. It pairs well with roasted tortillas! Fantastic recipe!!! Great job!
