Pizza Casserole

Reviewed: Feb. 12, 2012
This is super yummy and easy!! The only changes I made were ground chicken instead of beef, whole wheat rotini pasta and a jar of tomato basil spaghetti sauce. I also added chopped black olives to the mix. Grated some parmesan and sprinkled a little italian seasoning on top of the mozzarella . Yummo!! I am sure you could add any veggies to it that you would normally eat on a pizza. Thanks for a hearty and easy recipe!

Chicken with Herb Sauce

Reviewed: Jan. 8, 2012
I made this last night and won't make it again. I didn't have the fresh herbs, so I used dried like others suggested. It didn't have much flavor except for a weird tang. I kept trying to add more herbs, but nothing. It was really runny, so I did add some flour to thicken it.

Brooke's Best Bombshell Brownies

Reviewed: Dec. 21, 2011
I've made these brownies a few times, but had not made them in awhile. I just baked a batch and yummo!! I forgot how delicious these are! I always cut the recipe in half, bake them in an 8X8 dish, use margarine instead of butter, egg substitute and white chocolate chips. They always turn out amazing and I don't feel as guilty eating more than 1 because I cut out some of the fat! ;) I also suggest just hand mixing, so the batter doesn't get over mixed. Best brownies ever! Everyone must try these!

Honey-Dijon Chicken

Reviewed: Nov. 23, 2011
I gave this 5 stars because although it is not the best chicken I have ever had, it was tasty & SUPER easy! It went really well with rice. I did double the sauce as suggested by other reviews. Delicious and I will certainly make it again!

Old-Fashioned Cheese Potatoes

Reviewed: Oct. 27, 2011
Mmmm! These were delicious and super easy! I made them exactly as the recipe says, but used light margarine and skim milk to make them a little healthier. I do agree with some other reviews that you might want to add more salt. I don't even like American cheese, but had some on hand because my husband loves all cheeses. I couldn't stop "tasting" them once they came out of the oven! Thank you for this recipe!

Quick and Easy Chicken

Reviewed: Aug. 25, 2011
I give this 3 stars only because it was good, but just tastes like BBQ chicken. I only made 2 breasts, but still doubled the sauce since many reviewers said too. I still think you need more. Also be careful if you add the sauce to the pan after cooking the chicken. I let my pan cool for a few minutes and it still burned to the bottom. I ended up just finishing the chicken with the sauce in the oven. Overall though, it was alright. I would make it again in pinch since it is easy and doesn't require many ingredients.

Waistline-Friendly Turkey Chili

Reviewed: Aug. 7, 2011
I didn't have some key ingredients to make our usual chili, so I tried this one. I put it in the crockpot and the only thing I did differently was omit the chili flakes because many reviews stated it was too spicy. I didn't think it was spicy at all, so I ended up adding in the chili flakes after tasting it. I thought it was pretty bland and also too sweet! My husband will eat it because he will eat almost anything, but I won't be making this again.**I changed my rating from a 2 to a 1. My husband heated up a bowl when he got home and eventhough I said he will eat almost anything, he couldn't even eat the bowl he made. He thought it was way too sweet and I ended up dumping the rest!

Strawberry/Rhubarb Crumb Pie

Reviewed: May 17, 2011
I took the advice of everyone and added cornstarch. I added 2 tsps. Thought this was very yummy! My crust was soggy in the center though, so next time I will par bake it for about 5 mins to prevent the juices from soaking in.

Slow-Cooked German Short Ribs

Reviewed: May 17, 2011
I give this stars because the flavor is really yummy, but it reminded us why we don't make beef ribs...they are a lot of work for little meat. That was the only problem with this recipe. There was so much fat in the pot and not much meat! I cooled the sauce and scooped out as much fat as I could before adding the flour. Again, great flavor so we are going to try this again, but with a roast instead.

Easy Beef Stroganoff

Reviewed: May 7, 2011
This actually turned out pretty good, but I did make a few changes. First of all, I cut the recipe in half because it was only for 2 of us. I used ground turkey, reduced fat sour cream and chicken stock because that is what I had. I also added diced bell peppers and some paprika. I felt it needed more sour cream because it was still a little thin, so I added in about another 1/4 cup. I will definitely make this again because it was yummy, easy, cheap and very filling!

Mom's Zucchini Bread

Absolutely delicious! This was my first time to make zucchini bread and this was easy and yummy. I used egg sub and applesauce instead of eggs and oil, just to cut out the fat. Great recipe! Thanks!

Blonde Brownies I

Reviewed: Jul. 26, 2010
My husband ate the whole batch in 2 days! I used peanuts because my hubby doesn't like walnuts. I also didn't melt the butter. I just creamed it with the brown sugar and it turned out just fine! My only complaint is they fell flat in the middle and didn't hold together very well. They were yummy though, so I will be making these again!

Mayonnaise Biscuits

Reviewed: Jun. 23, 2010
I made these to go with our Father's Day breakfast. They were super easy and very tasty! I didn't have self-rising flour, so I made my own. Just mix 7/8 cup of regular flour and 1 tsp of baking powder per cup needed for the recipe. They were even better warmed up and topped with butter and honey the next morning! Thanks!

Marshmallow Fondant

Reviewed: Jun. 22, 2010
Hello! I just made this fondant and it was super fabulous!! I've made a few fondant cakes using the Rolled Buttercream Fondant by Kelley, but I am making my 1st wedding cake in a few weeks and I wanted to try out a different recipe. It tasted pretty good, although I do prefer the flavor of Rolled Buttercream Fondant. I will definitely be using this fondant because it was super easy and not as sticky as you would think! The best parts are the ease of coloring the fondant and how quick it comes together. **Okay I just changed my rating from a 5 to a 3 and this is why: It truly was easy to make, but when I actually went to use it for my cake it was really hard to roll without sticking to my counter. I had to use LOTS of powdered sugar, which made a huge mess to clean up. Also it was not smooth and I ended up having many cracks all over my cake! Each batch turned out this way and I followed the recipe exactly. Sorry, but I will be switching back to the Rolled Buttercream Fondant!

Red Bean 'N' Sausage Soup

Reviewed: Apr. 24, 2010
This was really good!! It had a light sweet and tangy flavor. I added extra peppers and some minced garlic while cooking the onions. I took the advice of another member and served it over brown rice. Excellent idea! I just made a little slurry of cornstarch and water, added it to the soup and let it reduce longer, until it became thick. We will sooo be making this again!!

'Got Some Crust' Macaroni and Cheese

Reviewed: Apr. 20, 2010
Woohoo this was delicious! I've been using another Mac & Cheese recipe from this site for awhile, but I wanted to try a new one. This is my new go to Mac & Cheese recipe!! The only changes I made were adding some chopped red & green peppers, a few cloves of minced garlic and a little swiss cheese for some extra creaminess!! This was also easier to make than other cheese sauces! Everyone should give this a try! PS~I agree with one of the other reviewers. There was no way this could feed 12, at least not in my family! I cut the recipe in half, but my husband and I alone did not leave any leftovers. That would mean together we ate 6 servings...I certainly don't think we did! :)

Bacon-Cheddar Deviled Eggs

Reviewed: Apr. 9, 2010
These were pretty good eggs, but nothing spectacular. I substituted fat free miracle whip for mayo and turkey bacon for regular. I added some grated onion and paprika to the mix for more flavor. The bacon and cheese didn't really add much flavor and the mix was dry, so I also had to add more miracle whip and mustard. I will make these again, but with my additions and I will probably play around with it more.

Pancakes

Reviewed: Mar. 13, 2010
This was super easy!! I woke up and had a hankering for pancakes, so I looked up a recipe and thought this sounded easy and they were! I used wheat flour instead of white, applesauce instead of the oil and egg substitute and they were delicious. No need to ever spend the money on a box of mix. Thanks!!
