Brown Sugar Meatloaf

I really liked this. I pressed it into a bread pan, but next time I think I will make it a log instead. Then the caramelization can get all over the whole thing and not just the bottom (top-when you flip it over). I also would decrease the sugar just a bit. It was pretty sweet.

Seven Layer Tortilla Pie

This was amazing! So simple and very filling. I did 2 cans of refried beans instead of the pinto beans and added a can of corn with the black beans. I think it added something different than just layers of beans. Served it with torn lettuce, sour cream, salsa, olives and for a little extra crunch, some lightly crushed tortilla chips! Wonderful!!

Fiery Fish Tacos with Crunchy Corn Salsa

This was really good! I'd never had jicama before and was pleasantly surprised! I added a can of rinsed and drained black beans and a diced tomato. This made SO much salsa!! I would halve the salsa recipe or double the fish! Make sure you dice the veggies to about 1/4" or less. I didn't and it was very chunky salsa. Also don't cube the fish! It basically disintegrated and we had salsa topped with fish flakes... :)

Fried Rice Restaurant Style

This was good. The problems were my fault, not the recipe. Definitely make sure you use cooked, COLD rice. I added chicken and when reheated it was tough and dry. No chicken and cold rice next time will be great!

Rich and Simple French Onion Soup

I changed this so much I don't know if I SHOULD rate this one. What I ended up with was awesome though! I used 1 T butter, 3 T olive oil and the onions. I cooked them, covered on med heat for 30 minutes. Uncovered it and added 1 tsp sugar and salt and cooked them for another 15-20 minutes. Added about 4 cups of broth and thyme. Simmered for 15 minutes. I didn't have broiler-proof bowls, so I toasted the bread and cheese (mozzarella and parmagiano). Ladled out the soup and topped it with the bread! Fantastic!!

Lemon Herb Grilled Chicken

Good flavors. I marinated the chicken in the broth mixture for a few hours. I ended up baking this because I don't have grill. I lined my baking pan with foil, put the chicken and the broth in the pan and baked it at 350 for about 25-30 minutes. It was so juicy and tender!

Cheesy Vegetable Lasagna

This has great potential! I read some of the other reviews and noted that there was some needed spices. I added basil, oregano, salt, garlic and red pepper while cooking the vegetables. I should have added some salt to the spinach mixture as well. It was pretty bland. So test the flavors before you start the layers. Make sure they taste good or you will have a boring dinner.

The Best Banana Pudding

I like sweet, but this was a little too sweet. I was hesitant about adding the sweetened condensed milk, but thought that if it got such high ratings, it must be good. I shouldn't have. The flavor was great, but I ended up with sugar shock.

Vegan Split Pea Soup I

My husband says this is restaurant quality (with a few suggested variations)!! First, I used olive oil instead of veg. Vegetable broth instead of water and added the herbs (which I doubled) with the peas and barley. Didn't add the salt. After I added the potatoes, etc., I only needed to cook it for another 20-30 minutes. Perfection!!

Chicken Tortilla Soup V

Wowie Wow Wow! This was so good! As I was making it, I realized that it was basically just chicken and corn, so I added a can of black beans (rinsed and drained), and a can of diced tomatoes. Perfect! Will definitely be making this again!

I really liked this recipe. It is simple and delicious! The only thing I might change is the amount of butter. Even a few Tbs less. It was just a bit too greasy. Forget trying to reheat this. It just doesn't work... :( Too bad, because it was really good and we had leftovers!
