HOW ARE THESE SOOOO GOOD? I've done many banana muffin recipes, none this amazing. Used fat free yogurt instead of sour cream, added an extra 1/2 cup of banana.Don't use the full amount of sugar, I substituted half with 1/2 cup brown sugar and about 3/4 cup white sugar & it was still a bit too much sugar. Yummyyyyyyyyy

Baingan Bharta (Eggplant Curry)

DELICIOUS! I added zucchini when the onions were cooked, and the eggplant a little later. Almost doubled some of the spices (cumin,garlic,ginger). This was REALLY a wonderful and super easy recipe,took me about 40 minutes from when i started cutting the onions to finishing!

Veggie Lasagna Florentine

YUM! Takes much longer than 20 minutes to prep though. Used ricotta cheese instead of the cottage cheese, also added extra brown sugar into the sauce...it was a HIT

Zesty Potato Soup

Really delicious, everyone loved it. I used 2 cups of water and 1 cup of chicken broth. Didnt add any bouillon or additional salt. Used Extra Sharp Cheddar instead. Will use extra potatos next time....YUMMY
