Zucchini Patties

These were excellent, I did use potato flakes in place of the flour and I really think it makes the biggest difference. I also squeeze most of the liquid out of the zucchini. I've used Italian Blend cheese when I didn't have mozzerella and also a combination of that with cheddar. We really liked a few warm sliced roasted red peppers on top. Great way to use zucchini.

Capers and Halibut

This was really good, the flavors really come together. I wasn't too sure at first when I put the sauce together since it smelled pretty strong but it was excellent in the end. Definitely a keeper.

Slow Cooked Corned Beef for Sandwiches

I made this for some friends over St Pat's Day. They all thought I was nuts using so much garlic and peppercorn. It was fabulous, and I'm not a big fan of corned beef myself. This is the only corned beef recipe I'll be making from here forward.

Eggplant Parmesan II

We really enjoyed this, the baking is so much cleaner than frying and, less oil to consume in the end. I followed the tips from NDG42200 by sweating the eggplant first, then baking at a higher temp. We also did not make the full recipe as it would be quite a lot. It was very good. We'll have it again and again.

Southwestern Egg Rolls

Very good, I omitted the spinach and followed the suggestion of baking these at 425 for 15-20 minutes, they needed to be covered about half-way through. Used one can of Costco chicken and extra corn and black beans. I ended up with nine.

Crustless Spinach Quiche

Very good. Used 1 cup fake eggs with 2 real. Sauted fresh spinach along with fresh mushrooms and scallions. Then cheddar cheese with a 6-blend italian. Used the recommendation of adding about 1 Tbsp. flour. I think it firmed up the consistency better than any of the other quiches I have tried before. Great recipe!
