Shepherd's Pie VI

Reviewed: Nov. 29, 2009
This was really good. I did think the direction to mash the carrots was odd... (Direction #2) I did not do that. Instead I just boiled the carrots until they were soft and added them to meat mixture. I also added a can of corn and a can of french-cut green beans. Since I added so many extra veggies to the dish I doubled the ketchup and added 1 whole cup of broth so that there would be more liquid. I also used a 3 quart pan instead of a 2 quart pan so that there would be enough room for everything.

Hamburger Pie

Reviewed: Nov. 29, 2009
This is a very quick and easy recipe. I used 1/2 pound of lean hamburger and 1/2 pound of lean sausage. I added garlic, diced up a tomato and actually used ketchup instead of tomato soup. (The vinegar in ketchup adds a nice flavor to the dish.)

Chex® Muddy Buddies®

So easy!!! I almost see no point in writing a review at all. All of the reviews are pretty much the same. They all say this is AWESOME!!! >>>>>>I added a half of cup of coconut to the powdered sugar before I shook it all up. It was a nice addition. I did not shake it in a bag. I had a mixing bowl that has a lid and used that to shake it all together.

Pumpkin Cheesecake II

Reviewed: Nov. 26, 2009
1. This is an easy recipe to make gluten free. As written, the only ingredient with gluten in it is the graham crackers in the crust. To make the crust gluten free replace graham crackers with 3/4 a cup of almond flour and follow the recipe. >>>>2. I made a very simple caramel glaze to top it with. (3/4 cup of brown sugar, 1/4 cup water, and 1 1/2 tsp vanilla. Stir and bring to a boil. Drizzle over the top before serving. Very delicious!

Simple Syrup

Reviewed: Nov. 25, 2009
I use this base recipe for everything and it can be adjusted to fit lots of purposes. For margaritas I make this syrup and add lime juice to mix with tequila and triple sec. I add vanilla to this recipe to make syrup for iced coffee. >>>>>>ONE HINT>>>>>> It is easy to make this syrup as thick or as thin as you would llike. If you want it thin follow as written and turn it off after it starts to boil. If you want a thicker syrup just cook it longer lowering the heat a little bit after it starts to boil.

This was incredible! Much cheaper than Starbucks... I did not have half and half so I just used regular old milk. I also added some ice cubes.

Aracely's Flan

This was pretty good. I really liked the caramel made from brown sugar instead of white. I baked my in the oven in a water bath like other reviewers. I think 60 minutes was just a bit too long. Next time I will check it at 50-55 min.

Taco Seasoning I

Reviewed: Sep. 25, 2009
For everyone with Celiac that can't eat "modified food starch" this is a wonderful alternative! In fact it is so tasty and cheap that it beats packaged taco seasoning any day. I only made one change after making it a few times - I doubled the amount of cumin. I also make this in large quantities and just store it in a zip-lock bag so that I don't have to mix it up every time I need it.

Spanish Flan

Reviewed: Sep. 25, 2009
Oh my gosh! This is great! Mine did not come out looking quite as pretty as some of the other pictures but it tastes incredible. When they say that the sugar syrup dries fast it does! Literally in just a few seconds so follow the advice of others and put the pan in the oven for a few minutes so it is warm and the syrup will spread better.

Absolutely Fabulous Greek/House Dressing

This is soooo good! I plan on making this all the time. I did follow the advice of others: equal parts olive oil and red wine vinegar. I also added a bit of sugar per the advice of another reviewer. It was perfect.

Best Spanish Rice

I think the chicken broth makes all the difference! Keep in mind that the liquid in this recipe may be too much if you live a humid place. I made mine with 1/2 a cup less of broth and it turned it out perfect.

Chocolate Ganache

Reviewed: Sep. 13, 2009
I may have done something wrong... but this was very runny. I followed the directions exactly but never got a good consistancy and even after being cooled in the fridge it is not "spread-able"; it is runny. (I used very high quality ingredients so that was not the problem.) Despite the consistancy it does taste good!!!

Fluffy Peanut Butter Frosting

Reviewed: Aug. 30, 2009
Amazing! 1) The directions to "add milk as needed" is key to getting this to turn out. I halved the recipe and still used three tablespoons of milk in just half a batch. (If yours does not turn out don't give a bad rating to this recipe. You did something wrong. :o) ) 2)I used SOY milk and it turned out perfect. HALF of the recipe covered 18 cupcakes.

Fry Sauce

Reviewed: Aug. 23, 2009
This recipe is a pretty standard recipe. Some alternatives are: Use your favorite BBQ sauce in place of the ketchup and follow the recipe as is. OR another way to make it great is to make the recipe as is listed and add about a tablespoon of soy sauce.

Curried Rice Pilaf

Reviewed: Aug. 23, 2009
This was really good. I made quite a few changes based on other reviews and based on what I had on hand. 1) I used red curry because that is what I had - I also tripled it like other suggested. 2) I added 1/2 cup of shreaded carrots and 1/2 a cup of french cut green beans. 3) omitted the onion because I did not have one and added onion powder instead 4) I used walnuts instead of almonds 5)I used olive oil instead of butter. THIS recipe was great!

Ranch Dressing II

Reviewed: Aug. 8, 2009
Wow! This recipe already has soooo many great reviews but I still wanted to add mine. This recipe is incredible. Unlike other recipes I have tried this one is really thick and creamy like store bought ranch dressing. I did ADD about 3 Tablespoons of dried buttermilk because so many other recipes called for it.

Garbanzo Bean Chocolate Cake (Gluten Free!)

Reviewed: Jun. 24, 2009
I have made the chocolate version several times and love it. Even non-Celiacs in the family love it and it is realitively healthy since there is no butter, or oil in it. I have also made my own COCONUT version of this cake. To make a coconut version: 1)Omit the chocolate chips. 2)Add one can of coconut milk. 3) Add a bag of dried coconut. 3) Increase the sugar from 3/4 cup to 1 1/4 cups. 4) Add 1/4 tsp of salt. 6) 1 tsp of vanilla. 5)I like to top it with coconut frosting from the baking aisle of the store.

Homemade Black Bean Veggie Burgers

Reviewed: Jun. 14, 2009
These were easy to make and delicious. I made a few changes. 1)I used dried beans that I had soaked and cooked myself. I used 2 cups of beans. 2) I did not have a pepper on hand so I put in some matchstick carrots. 3) I added about a tsp of salt 4) To make them GLUTEN FREE for people with celiac I crushed up tortilla chips and used those in place of bread crumbs. THESE ROCK!!!!

Flourless Chocolate Cake I

Reviewed: May 29, 2009
This cake is incredible and totally gluten free for us Celiacs! 1)I made it with half milk chocolate chips and half white chocolate chips instead of the dark chocolate suggested. I like the lighter flavor of the other chocolates. 2)I cut the recipe in half. This is too rich to have too much on hand. 3) I got scared as I added the sugar water that I had done something wrong because the chocolate and liquid were not mixing together well. Never fear! Keep mixing it suddenly smoothed out and mixed together perfectly. 4) I topped it with canned raspberries.
