Hot Shredded Chicken Sandwiches

I cooked chicken tenderloins in the crockpot with water overnight then the next morning added the rest of the ingredients but I used STOVE TOP STUFFING savory herb instead of the suggested seasonings and crackers. Set it on low and it was ready by game time. Pretty good!

Beer Cheese Soup III

Whenever I have made beer cheese in the past, it always got gritty from the milk curdling. This was very good and was able to be heated high enough to melt the cheese but not curdle. I did not use the broccoli/cauliflower due to being allergic. I also did not add any water but used beer and chicken stock. I used sharp processed cheese (8 oz), montrey jack (8 oz) and can of Campbells chedder cheese soup. I used Heiniken beer and for more "bite" added dry mustard, red and white pepper, Tabosco sauce and Worchshire sauce. Very good!

Jalapeno Popper Spread

I made it as directed and we did not like this recipe at all. I am going to try to salvage it tomorrow by putting in canned chilli, cheddar cheese and hot sauce thus trying to convert it into something else. I made this to "try" before a big party next weekend and I am glad I did.

Grilled Bacon Jalapeno Wraps

I HAVE ONLY SEEN MY HUSBAND CRY TEARS OF PURE JOY ONE OTHER TIME....and that was when his college football team WON the NATIONAL CHAMPIONSHIP.....Yes, these bacon Jalapeno wraps are THAT GOOD!!!!!! TIPS: I did boil the Jalapeno halves for 6 mins, used a packet of dry ranch dip/cream cheese/shredded Italian cheese that was leftover in fridge and mixed. I put them in the freezer for 20 mins after wrapping with bacon and put them on skewers instead of toothpicks. I grilled them on medium/high heat cheese side down until cheese began to bubble then flipped them until cheese bubbled more and then moved them to a piece of foil to continue cooking them on the grill. These were tender, low amount of heat and I did not get cheese all over the place although this can easily happen if you do not watch them cook. Hope you and yours cry tears of joy as well!!! UPDATE: Made these differently. Added to cream cheese: 1 tsp of chili powder, 1/4 cup of brown sugar, 1 tsp cinnamon, 1/2 tsp garlic powder, 1 Tsp Worcestershire sauce, 1/2 tsp liquid smoke, 1/2 cup of shredded Italian cheese or cheddar....YUMMY!!

Absolutely Fabulous Greek/House Dressing

I love this simple dressing recipe! Next time I will add some lemon zest to it but I think if I added lemon juice it would become too tart. For some reason, I also want to put this dressing on a Italian Hero sandwich. A new staple at our house! UPDATE: Added the lemon zest and it made the dressing taste very Greek. I poured about a 1/4 over a container of FETA cheese to marinate and this is to die for!!!

Ranch Dressing II

We really enjoyed this ranch recipe. I am looking forward to using fresh herbs from the garden this summer with fresh garden veggies to dip into it. I will also add 1 finely minced fresh garlic clove the next time I make it.

Grilled Marinated Shrimp

We enjoyed these....ate 2 lbs between the two of us. We ended up putting the steaks back in the fridge and just had shrimp. Next time I will use lime juice instead of lemon to make it more "key westie."

Marinated Grilled Shrimp

We really like the grilled shrimp. I marinate it for at least 24 hours so the shrimp can pick up the married flavors.

Deep Fried Dill Pickles

We did not care for these. We expected the type of fried pickles we get at the fair. This recipe is more "cakey" and we are looking for a more "tempura" type battered fried pickle.
