Smoky Chipotle Hummus
This was fantastic... my friends thought it was much better than store-bought. The second time I made it I used less tahini (I could really taste it in the first version), no roasted red peppers (didn't have any) but threw in an extra sun dried tomato.

Vegetarian Lime Orzo
Loved this recipe! To boost the nutrition content I added a half-bag of frozen spinach plus about 1/4 cup almond slivers. This is a definite make-again.

Baked Tofu Spinach Wrap
This is a really easy and fast lunch. To make it a bit healthier I eliminated the ranch dressing and smeared a thick layer of roasted red pepper hummus on the tortilla. Really good.
