Fideo (Mexican Spaghetti)
Wow. I decided to make this as a surprise for my Fiance, since it was a dish that he grew up on. He smelled it when it was almost done cooking and came to investigate. He was so thrilled. I rarely am able to recreate dishes his mother made, but this one was almost perfect. Rather than fresh tomatoes, I used undrained rotel (since it was more similar to hers). I used the amount of spice the recipe called for, but it was too spicy. I will make it again and only use half, if that. He also said it needed more tomato flavor, and that his mom used tomato sauce. I will be adding more tomato sauce when I make this for dinner again tonight. Perfecto.

Pretzel Turtles
These were easy to make, but messy. I used Rolos, but I think a better candy choice would really show through. I made them for Valentine's day and put them into cups for gifts. The recipients loved them.

Old Fashioned Chicken and Dumplings
I read a review that said that you can't rate a recipe when you change it - I must respectfully disagree. Any good cook should be able to see a recipe and know what would work best for his/herself, family or friends. I liked this recipe, although I went 'lazy' on the dumplings. One of these days, I will try to make my own dumplings. I used two chopped onions, some chopped celery and I added some carrots (It's just not chicken soup without carrots). Some like green beans, but we don't. I also added some flour to the veg while it sauteed, because I like my chicken n dumplins thickened. I added some heavy cream at the end. This is a great recipe and can be modified to make chicken soup or chicken and dumplings.
