Broccoli, Leek, and Potato Soup

Reviewed: Dec. 14, 2009
This soup is great! I also question the reviewer that said the recipe states 2 tablespoons of pepper. The recipe I used only listed one tablespoon of pepper. I actually added and extra 1/4 teaspoon of pepper. I also added 1/2 teaspoon of cumin, added no salt, and used turkey bacon. Perfect. I pureed about 3/4 of the soup. When I was in the grocery store purchasing the leeks a woman told me to soak the leeks because they contain "sand". I thought she was nuts but I did soak the leeks for about 10 minutes and sure enough, there was sand at the bottom of the bowl! Not sure if this is true for all leeks but you may want to chop the leeks and then soak before using. Thanks for the recipe.

Goat Cheese and Arugula over Penne

If I could give this 6 stars, I would. Simple and so good. I followed the directions except I sauteed the garlic with 1/4 cup of pine nuts. Fantastic. Thank you so much for this amazing recipe.

Apricot Coconut Cookies

Reviewed: Dec. 7, 2009
These cookies are amazing! I made these just to get rid of some apricot preserves and WOW, what a pleasant surprise! I made the recipe just as is and it was perfect. I may add almonds like another reviewer suggested. Fantastic! Thanks so much for this recipe!

Carrot Soup with Potatoes and Cream

Reviewed: Dec. 7, 2009
Good recipe and really easy to make. I had to add a lot of white pepper to get it to a flavor we were happy with (about 1/4 - 1/2 teaspoon). I also added some paprika for richer color and more thyme, about 1/4 of a teaspoon. You may want to take the bay leaf out before blending (I forgot). Good flavor even without the cream. Thanks for sharing!

White Chili with Ground Turkey

Reviewed: Dec. 1, 2009
Love this. Wasn't sure of the cinnamon either but WOW, what a great touch. I used chicken instead of turkey, 3 cups of broth and one cup of water (ran out of broth), added 1/4 teaspoon of French Four Spice and 1/2 teaspoon Black Red (a black pepper and cayenne pepper mix) (both from Penzey's). I didn't add any cheese and it was still great! Thanks for the recipe...this is a keeper.

Creamy Sweet Potato With Ginger Soup

Reviewed: Dec. 1, 2009
I altered this recipe some so I can't rate it as is. I added 1 teaspoon of French Four Spice (by Penzey's) and only one teaspoon of ginger. I thought it was pretty bland so I added about 1/2 teaspoon cumin, about 1/8 teaspoon salt and about 1/8 teaspoon white pepper. I also used whole milk instead of half and half. Great recipe, will make again. May increase the garlic next time.

Seven Layer Tortilla Pie

Reviewed: Nov. 18, 2009
This was great but frustrating. There was no way that all of these ingredients would fit into our pie pan. Do others use very large pie pans or something special to make this dish? I had to split it into 2 pie pans. Was still great but agree with previous reviews that it needs some spice and flavor. Will add some taco seasoning, peppers and more cilantro next time. Thanks for the recipe!

Pasta Shells Florentine

My husband and I loved this. We used the cottage cheese and followed the recipe except we added pepperoni. Fantastic. Will make again and again. Thanks for the recipe. Update: I have made this 4 times now. It is very adaptable! Last time used fresh arugula instead of spinach and it was great!

Jam Filled Butter Cookies

Reviewed: Nov. 6, 2009
These cookies are great! I liked them much more than I thought since I'm not crazy about preserves... I altered the recipe by adding 1/2 teaspoons of vanilla and 1/4 teaspoon salt like other reviewers suggested. Next time I'll add 1 teaspoon vanilla instead. Fantastic! Thanks so much for the recipe!

Apple Crisp II

Reviewed: Nov. 3, 2009
Fantastic! Even my picky parents loved this! I added less sugar than suggested. I used a variety of apples, some of which were tart. It worked out fine. I added all of the water which I was glad about since it helped during reheating. Thanks so much for a great recipe! I will make again and again.

Curried Egg Sandwiches

Reviewed: Nov. 3, 2009
I love this recipe. I'm not sure if it is the type of curry that we used (Penzey's) but my husband and I LOVED this! We did not find it as boring as others but I could see spicing it up a bit. I may try that next time. I did add 1 teaspoon of dried, chopped onions and used 6 eggs instead of 4 like other reviewers had suggested. I may even add an extra egg next time I make it. Fantastic and thanks so much for the great idea! Yum!

Kelly's Super Simple Shower Punch

This is so easy to make and so yummy! This is a great punch for kids but at the party I brought this to, it ended up being drank by the adults as well...with a shot of vodka added. It was very tasty and a big hit. Highly recommend! Thanks for the simple recipe.

Oatmeal Peanut Butter Cookies

Reviewed: Sep. 9, 2009
I really enjoyed these. I used butter instead of margarine and did use the shortening. I took the suggestion of adding 2 cups of oatmeal instead of 1. Glad I did. They do break apart easily though, probably because of the amount of oatmeal added. Will make again.

Dill Cucumber Dip

Reviewed: Aug. 27, 2009
This is a great recipe and a great way to use up all those cucumbers from the garden. I did think the recipe was bland. I doubled the dill and also added a teaspoon of cajun seasoning (thanks whoever suggested that)..it made it so much better...just a slight kick and everyone in our cooking club really enjoyed it. Will make it again. Great served with crackers.

Summer Squash Casserole with Nuts

Reviewed: Aug. 27, 2009
This recipe is okay but bland. I'm giving it 4 stars because I think with some herbs, it could be much more tasty. I would try adding some fresh basil to this recipe...maybe more pepper. I did modify it a little, I used almonds instead of pecans which I thought was great. I also used crumbled crackers as a topper which added flavor. Overall a 4 star but will spice it up next time I make it.
