All Day Apple Butter

I used 13 empire apples, which I figured was about 5.5 pounds (after one kind member weighed some for me and said each was about 7 ounces). I only used 2 cups of sugar and increased the cinnamon to 1T, and it was perfect.

Kalamata Olive and Garlic Bread

Great, but way too salty! I would prefer maybe half the salt, but I don't know if reducing it would affect the consistency of the bread. I added rosemary and sun dried tomatoes, and I used some kind of Italian olives instead of Kalamata olives.

Shoofly Coffee Cake

Wonderful with some modifications: I used Buckwheat pancake mix and added extra cinnamon (probably 2/3T total), plus some brown sugar to it. I also beat an egg to add to the wet ingredients so it would be more cake-like. It came out perfect! I only baked it for 22 minutes, and the consistency was light and crumbly. I used half white and half brown sugar in the streusel on top, and I finished with a glaze of 1T melted butter, 1/2C powdered sugar, and 1T milk.

Golden Yam Brownies

These were very good, but they just tasted like a sweet potato casserole to me. I used canned yams because I did not have any fresh ones, and I think that made the brownies too moist, even with omitting 1/4C of butter. I also left out an egg based on other reviews. I might try these again with some other variations.

Delicious Raspberry Oatmeal Cookie Bars

Not bad. I wouldn't make this if you were trying to impress someone, but it is pretty good and easy. I used 1/2 unsweetened applesauce and 1/2 margarine in the place of butter. It probably could have done with less of both because I had to add more of other ingredients after. It was really chewy after baking though, which I like. I sprinkled chocolate chips on top too.

Salt and Garlic Bagel Chips

Very good! I used 1 teaspoon minced garlic and 1 or 2 teaspoons garlic powder. I had mini bagels in the fridge and used 4 of those. You can add the spread to them and put them right in the oven without needing to dry them out first.

Grilled Broccoli

I LOVE broccoli cooked like this! I usually just bake it in the oven (line a baking sheet with foil) at 400 degrees. I like to add garlic powder to it as well. I don't know the amounts of the ingredients I use, because I just throw them on there, but I don't think the amounts really matter. You can pretty much eyeball the whole thing! Mmmmm, so good!

Impossible French Apple Pie

Not very impressive. The filling and streusel were fairly good, but I did not like the "crust" at all. It was extremely soggy and did not taste like a crust. I ended up with a blob of mush on my plate when I tried to take a slice out of the pie. I would not want to serve this to guests and will not be making it again.

Spicy African Yam Soup

I love this recipe! I've made it a few times. I prefer to add another large sweet potato, a little extra onion, and at least 1/2 of a red bell pepper. My mom likes the 2T of peanut butter, but I find it a little strong, so I only use 1&1/2T. Medium salsa gives it the perfect amount of spice along with the cumin.

Peanut Butter Chews

Pretty good. I used frosted flakes (5 cups as suggested), and I crushed them some, but I'm thinking they might have been better crushed more finely, as it would have made the bars more dense. I like them best refrigerated. I sprayed a 9x13 pan with Pam and pressed the mixture into it. 3/4C of melted chocolate chips drizzled on top was plenty.

Quick and Easy Indian-Style Okra

I'm sorry, but I did not care for this recipe at all. Please learn from my mistake and save yourself the trouble. This was so bland; I more than doubled the spices and still it didn't taste flavorful at all. In fact it tasted pretty bad (before and after adding more spices). I tried to fix it up, but really this recipe isn't even worth experimenting with.

Chicken Tikka Masala

Very good, but way, WAY too salty! It was fairly spicy, but the overwhelming saltiness made it hard to go two bites without water or plenty of rice. Other than that, perfect. I did use a little extra ginger and cinnamon in the marinade though, like always. :) I'll try 1/2 tsp of salt in both the marinade and sauce next time. The chicken tasted fantastic right off the grill too before I added it to the sauce. You could easily serve it with some other appetizers. Also, I only marinated it for about an hour and a half, and it was perfect.

Healthy Banana Cookies

These were good, but they needed some tweaking. Instead of the oil I used applesauce, and instead of dates I used raisins. I also added 1/3C honey and 1/2C oats as suggested in someone else's review, which I think was a good idea. I added maybe 2-3t cinnamon and a pinch each of nutmeg and cloves because otherwise the cookies were a bit bland. I think they would have been better (sweeter) if I'd have used more banana, but I only had one ripe one, so I added one and a half diced apples in place of the other two bananas. I'm giving these 4 stars instead of 3, assuming they'd be better with more banana like the recipe calls for.
