This was very good, I followed the directions almost exactly. I did add a few extra chile de arbol pepper to make it a little more spicy. I served it with cilantro lime rice and tortillas. Thanks for the great recipe.

Simple Carnitas

I followed the recipe exactly as stated, well I used a slow cooker because I don't have a dutch oven and they turned out great. I also followed Ken's review and fried them in a little bit of lard ( you said oil, but we like lard) and they were just as good as the ones I buy at the store. Thanks for the great recipe, we will be making this agian =)

This is just like the ones I have bought in the mexican store! I made it for my husbands birthday and it was great! I doubled the recipe and made to so i could put stawberries in the middle and stack them. Thanks for sharing the recipe. I will be making this again!

Chicken Mole with Four Chiles

This is a great recipe, a little sweet and spicy at the same time! The only change I made was I added two extra tortillas, also I used the chicken broth left after boiling my chicken thighs & legs, instead of water. I will be making this again. I served it with rice and onions marinated in lime and cilantro.

Fresh Cranberry Salad

I made this for Thanksgiving and everyone loved it. The only changes I made were when I put the cranberries in the food processor I added 1/2 cup of heavy whipping cream, I also added 1/2 cup more of sugar. Thanks for the great recipe.

Sopa De Lima (Mexican Lime Soup)

This was very light and delicious! I did not have 6 limes so, I just grated some lime peel into the soup when I boiled the chicken and it turned out great! I love the stong lime flavor in this. I will make this again for sure! Thanks for the great recipe.

Tilapia Ceviche

One thing I would like to add is that it should sit for at least 5 hours if the fish is raw, I personally am scared of that, so I just bring a pot of water to a boil and then add the tilapia for about 5-7 minutes until all white then drain water and shred fish and add everything else. Although I did not use the cucumber, and I like white onion.

Chiles Rellenos (Stuffed Peppers)

This is an authentic recipe, something that would really top it off is a nice tomato sauce over the top. I use about 4 roma tomatoes, 1/2 white onion diced, 2 garlic cloves chopped finely, 1-1/2 chicken bouillon cube, and about 2 cups of water. Put everything in pan and bring to boil, then once tomatoes are tender, put it in the blender and blend until smooth. Pour over the chile rellenos, and enjoy!

This is a great recipe, I followed it exactly and it tunred out wonderful! My DH ate it all up. We made tacos, and topped them with cilantro, onion, limes, and hotsauce. Then with the left overs took sandwiches the next day. Thanks for the great recipe!!
