I remember the first time my husband offered me a bowl of ceviche, which had several pretty colors; although scared me at the thought of un-cooked fish!  Then he started to tell me about how the lime juice cooks the fish, now if that wasnt one of the craziest thing I had ever heard I didnt… MORE

About this Cook
I am 25 & have 3 children, and a wonderful husband. We like to play soccer, go to the park, grill, ect...spend alot of our time together. I love to cook for his family, who are at my house alot. I am also going back to school to get my degree in Criminal Justice. After I graduate I will begin looking for a job as a police officer! Something I have always wanted to do.
My favorite things to cook
Mexican, is my newest adventure. I've been trying to learn to cook more mexican food since i enjoy it and my husband is from Guadalajara. But i also love to bake, i've been baking with my mom since i can remember i was always in the kitchen helping her.
My cooking triumphs
I learned to make pozole, mole, carne con juego, ablondigas.....
My cooking tragedies
Well..theres been a few but i comes with making new things i think. The one I remember is when, I tried to cut up serrano peppers w/o gloves on...oh boy what a mistake!! No one told me not to touch my face, I got it in my eyes, nose, it was horrible and my face felt as if it was on fire. Let say I have never made that mistake again!

Sopa De Lima (Mexican Lime Soup)
This was very light and delicious! I did not have 6 limes so, I just grated some lime peel into the soup when I boiled the chicken and it turned out great! I love the stong lime flavor in this. I will make this again for sure! Thanks for the great recipe.

Pollo (Chicken) Fricassee from Puerto Rico
I thought this was great! Next time I make it I think I will follow the other reviews suggestion to add a can of tomatoes. Also I topped it with some cilantto. Thanks for the great recipe!

Tilapia Ceviche
One thing I would like to add is that it should sit for at least 5 hours if the fish is raw, I personally am scared of that, so I just bring a pot of water to a boil and then add the tilapia for about 5-7 minutes until all white then drain water and shred fish and add everything else. Although I did not use the cucumber, and I like white onion.
