I'm married with three kids ages 5,3 and 9mths having been a resident of WA state for the past five years and love it here! I cook on my own time, bake for family, friends, co-workers and anyone who will appreciate it. I am inquiring about taking my love for cooking to a side career but am studing to be a nurse in the OB. I have been in healthcare for over seven years and am also striving for a Masters degree in Nursing with a speciality in midwifery.
My favorite things to cook
I love to bake anything desserts, breads etc and love to cook just about anything. I have recently taken an interest in ethnic foods such as Greek, Irish and Russian meals.
My favorite family cooking traditions
During the holidays I remember spending hours in the kitchen with my mom preping the meals and baking dozens of cookies to give out as gifts to family and friends. That is a tradition that I have tried to carry on to my daughter who also loves cooking.
My cooking triumphs
My ethnic background includes Irish and Celtic backgrounds and I made a lamb with a mint and rosemary rub. The meat was tender and the flavor was extradinary. My husband loved it so much and it was the first time that I had ever worked with Lamb.
My cooking tragedies
When I first learned to bake when I was a kid I made this batch of chocolate chip cookies. I was doing fine until I misread the ingredients and put a tablespoon of baking soda into the cookies. Not only did I burn them beyond repair but that tasted horrible. I was so upset but my mom just smiled and had me start fresh. The next batch turned out great.

Cream of Pumpkin Soup
The soup was very flavorful and was a nice addition to fall recipes. I ended up using a can of pumpkin pie filling instead and will probably go with the unsweetened pumpkin next time. I also made this recipe before and included onion but ended up with chunks of onion instead. This time I used onion powder to give it the flavor without the chunks and it was still very good.

Homemade Black Bean Veggie Burgers
I followed the recipe to a T and it turned out ok. I think I would have put some more spice into it but the texture of the burger actually turned out ok.

Peanut Butter Quesadillas
I held off on the butter, and made it a soy butter and jelly quesidilla because my family has an allergy to peanuts. Makes a nice addition to the classic! Will definately be making this again.
