Tia and David's Deep Fried Tortellini

To make these a bit healthier I baked them instead of frying them. I did them on 350F for 10 minutes, and they turned out great! Still crispy and delicious. I had a hard time knowing what to dip them in though. I added some "Johnny" seasoning to the breading near the end and really liked the flavour it added. I found that I needed a lot more breading than the recipe called for in order to fully coat the pasta.

Cranberry-Pumpkin Cookies

What a great winter/fall cookie! With all those flavors everyone is sure to comment with every bit about the orange zest, cranberry, pumpkin and walnuts. I found that I needed to use quite a bit of extra flour, but that I had best results when the dough was still quite sticky when I baked it (less flour). I used pecans in place of walnuts, and it worked fine. I think that it would have been nice to have the stronger walnut taste, however, as the pecans blend into the background (but provide some good texture though). Next time I'll up the cranberry content as some cookies didn't seem to have even one and they're such a nice addition. The whole family liked them! Not too sweet, and very comforting with a cup of tea! :)

Basil Cream Chicken

The only reason I'm giving this 4 stars is because it wasn't particularly attractive by the end! The sauce crumbled the breading and made it very damp. However, the dish was a total "5" on flavour! My brother said it tasted like KFC. It was very tender and the sauce was great. I didn't have grated parmesan so I used mozzarella, and that was good. I used part dried basil and part fresh, also good. I used part whipping cream and part 2% milk, which worked fine too. I ended up doubling the chicken broth though, as the original amount was not enough and immediately soaked right into the chicken breading and disappeared. I also thinly sliced and sauteed red peppers in place of the pimento peppers. I would make this again most likely, but not for company because of the appearance of the dish. Definitely try it though!

Quick Gnocchi

I haven't had too much "real" gnocchi, so I'm not the most qualified person to attest to how good this is, but I liked it! I made a quick vegetable tomato soup and floated them in it. They made a very delicious addition :)

Deep Fried Oreos®

This was my first time making deep fried Oreos, and I liked them. It was a very fun and different treat. I'd experiment with other recipes next time though. This recipe is basically an Oreo in a pancake, which is not necessarily bad, but it's not what I was envisioning.

Pumpkin Fluff Dip

Sooooo good! I used home grown and pureed pumpkin, which I imagine is much better than canned pumpkin. I don't buy Cool Whip, so I made my own whipped cream and folded it in. I served it with some nutmeg sprinkled on top for a nice touch. We dipped Arrowroot cookies in it, but I'm looking forward to trying different treats with it tomorrow during round 2! The family really loved this and we will definitely be making this again (including for an upcoming party). Adding a little extra spice is recommended :) Enjoy! Happy autumn!

Honey Baked Apples

I was making this after a long day of baking other things and it was getting late, so I did the sauce up in the microwave. It turned into a thin caramelly liquid, which I doubt would have happened if I had followed the dirrections. We didn't have apples, so I used pear halves and put them face down in the juices and bastes their backs with the juices. I didn't have cranberries or raspberries either, so I left them plain and served with vanilla ice cream with cinnamon sugar sprinkled on top. Nothing like the original recipe, but it was really yummy!

Dutch Babies II

I made these twice in a day and quite enjoyed them! I made lots of changes though... I added about 1 t sugar, more nutmeg than was called for, and 1 t vanilla. I'd probably add about 1/2 t cinnamon next time (oh, there will be next times!). I didn't follow the posted directions at all. I followed the simpler directions another commentor posted, and it worked great. I baked them in pie plates for 17-20 min. each. Serve immediately because they fall fast! I served them with diced peaches, strawberries, blueberries, syrup and icing sugar. A light Sunday evening dinner! The family was very impressed.

Cheese Souffles

I tried this today and liked it. I didn't really feel like eating much of it though. I took one commentor's advice and added some salt, and that gave it enough flavour. They rose quite beautifully and didn't take long to sink.

Oatmeal Peanut Butter Cookies III

These were good! I didn't make the filling this time around, but will hopefully try it the next time around. I made them into ice cream sandwiches instead, and it perfectly yielded enough for 10. They didn't last long in our house and everyone liked them! I second another commentor's advice: 9 minutes would be enough. I found with 10 they were slightly more done than I would have liked them to be.

Maple Cookies

Awesome! Loved these! I took a commentor's advice and subbed maple extract for the vanilla to make it just that much more maple-y, and it was great. Brought these to work after the fam had their fill of them and they were gone very fast!

Grilled Ham Steak

My family and myself enjoyed this ham. It wasn't absolutely amazing, but it was easy and quick. I found that the barbecue quickly dried out the ham, so next time I will double the glaze, put half on the bottom of a 9x13 casserole dish, arrange the ham steak on top, and brush the rest of the glaze on top. I'll bake it at 325F for 25-30min. I've found that this has worked well with other ham steak recipes and believe it will improve this one greatly. The fruity taste and cinnamon were lovely touches though!

Roasted Chickpeas

Just made these and they turned out really well! I didn't make much, so I decided to start with 20min before I checked them. 2/3 of them burned! I don't know if it's because my oven is a convection or what, but I'll definitely take other users' advice next time and start at a lower temperature and turn it to 450F at the end. I dry roasted them and added the seasoning afterwards, and it was nice! A really crunchy, fun snack.

Chai Tea Mix

This recipe looked really good and is well rated, so I took a risk and made it for my friend's birthday. I made up the mix and put it in a pretty jar with a homemade label on the side. Great gift idea! We tried some together and were very impressed, but felt that it needed waaaay more spices! I will be making this again (and she will too!), but we'll be tweaking the spice levels. I'm a Canadian user, so I took a fellow commentor's advice and just mixed the tea into a cup of Orange Pekoe black tea. Worked great!

Watermelon Pops

This recipe was such an annoyance! By the time I was done with it I was sick of it! The freeze times that the recipe states are much too short. Add 1 hour to each stage of pouring, I'd say. I give it 2 stars and not 1 because it actually tastes really good though!

Authentic Kicked-Up Syrian Hummus

Very good! I made my own tahini in the food processor by blending 2 T sesame seeds until smooth, then adding in salt, oil and water (don't remember the exact measurements, sorry!). Turned out great! I served it with pita triangles that were drizzled with olive oil and sprinkled with Greek seasoning and baked at 325F for 3min. I'll definitely be making this again!
