Eggplant Parmesan I
First time really cooking with an eggplant. I used this recipe as a baseline to grow. Came out really good. I'm hooked.

French Onion Soup III
First time I've made Fr. Onion soup. Turned out great. Few things I modified: added only 1/2 cup of water, used Swanson's beef broth carton, mozzarella instead of swiss, parmesan as an option. Good basis will build on the recipe later.

Cherry Chicken Lettuce Wraps
This was an instant hit! Substituted: Sushi ginger instead of fresh. Can of sugar free bing cherries, which I rinsed all of the juice off (local store didn't have any fresh ones), used soy sauce instead of teriyaki and red wine rice vinegar instead of plain vinegar. It hit the spot !
