Cake Mixes from Scratch and Variations

Great cake, very moist. I used oil instead of shortening. I added the juice and pulp of one orange, used 2/3 cup of pineapple juice, 2/3 cup milk and about 1/2 cup of pineapple chunks. The batter was very watery, but it came out well. With these additions I was able to make 18 muffins. Topped with an orange butter-cream frosting, these were awesome.

Flip-Flop Cobbler

This was a very tasty cobbler. I used fresh blueberries and used water instead of fruit juice. It did require slightly longer to cook than suggested, and was still a bit soupy. Next time I would reduce the amount of water. I would also suggest cutting back on the sugar. I love my sweets, but I think reducing the sugar to 1/2 or 3/4 of a cup in total would be plenty.

Sugar Cookies VIII

These came out very well. I used 2 teaspoons of orange extract instead of adding lemon extract. It was subtly orange flavored. If you're looking for an extreme, I would suggest adding a bit more extract.

One Egg Lemon Pound Cake

This was very good. It was fluffier than the standard pound cake. I made cupcakes with the dough and cooked them for about 25 minutes. I didn't have lemon extract so I used lemon juice to-taste. I also made a syrup using lemon juice, lime juice and sugar, heated until the sugar dissolved. I dipped my cupcakes in this and it gave them an excellent flavor. It was a little messy, but very tasty.

Key Lime Pie IX

This was very good. It set fine for me, but I cooked it a little longer than suggested and let it refrigerate for a few hours before I cut it. Next time I would use a little less juice. It was a little tart for my taste, but otherwise very good.

Soft Pineapple Cookies

Good. Very fluffy. I substituted butter for shortening. I'd like to try it with white sugar. Keep them small. They tend to spread a lot. They seem to have a sheen to them while they're still hot, so it was a little tricky sometimes to just look at them and know if they were done.
