Apple Chicken Stir Fry
Good, healthy, but needed more. I poured a little bottled sweet and sour sauce over the mixture after serving - then my 7 year old LOVED it.

Roasted Brussels Sprouts
I was looking for a recipe with brussel sprouts without using butter - since I'm trying to cut down on unnecessary fat (and in the past I would drown my sprouts in butter and salt). Found this and love it. I really like the crispy leaves. I added 3 cloves of minced garlic - and it was a good addition.

Pan Seared Salmon II
I only had salmon patties from Trader Joes on hand and applied it to this recipe. Used other suggestions of using on pan and all I can say is YUMMMM!!!! My 5 yr old helped out and ate 1/2 of my patty. I served it on a bun with the peppers topping the patty. YUM, YUM....
