Owen's BBQ Chicken

Reviewed: Nov. 9, 2009
Very good. The sauce is thick & clings well to the chicken. I dip the Chx in sauce & then bake. Made with 1/2 of the ketchup as others suggested.

Chewy Brownie Cookies

Outstanding, do NOT overbake! They look a bit raw when they come out but "set up" when cool & melt in your mouth. This recipe is a keeper!

Easy Apple Strudel

Sooo Yummy! It is even easier to make it with Cherry Pie filling. One can will do it. I make this often for Sunday Breakfast & the plate is always licked clean.

Taco Lasagna

Reviewed: Mar. 30, 2009
Wow! Big family pleaser. So many possibilities for substitutions, too. I mixed refried beans in with meat & didn't have green onions, just minced sweet red onions instead. Used light sour cream & served with more sour cream & black olives.

Happy Shrimp

Reviewed: Mar. 28, 2009
Yummy. Not spicy at all, though. I substituted FF cream for heavy & it wasn't as thick but the taste was great! I doubled the sauce & didn't have enough shrimp so I added some seafood medley with the shrimp. Delicious! Served over angel hair pasta

Alaska Salmon Bake with Pecan Crunch Coating

Reviewed: Mar. 27, 2009
Delicious, fast & easy! I used Halibut (it's what I had on hand), reduced honey to 2tsp, changed mustard to spicy & used more nuts & less bread crumbs. The family loved it! I'll make it again.

Mediterranean Quinoa

I love quinoa but thought this recipe was too bland. The only change was to sautee 1 small zuchinni with the other veggies. It was good but needs some zip.

Filet Mignon with Rich Balsamic Glaze

Reviewed: Mar. 9, 2009
This was good but not great. Based on the other suggestions, I grilled the meat & made the glaze on the stovetop. I sauteed some minced garlic in olive oil THEN added the vinegar & wine. After reducing I drizzled it on top of meat. I'd like to see more depth to the flavor of the sauce. Next time I'd use some butter instead of Olive Oil.

Shrimp Etouffee II

Reviewed: Mar. 4, 2009
Delicious! Like others, I added 2 bay leaves, 1 1/2 tsp Worchester & about 1 tsp of cajun seasoning. I also thinned the sauce a bit with about 1/2 c. chardonnay & chicken broth. I didn't have shrimp so I tossed in a seafood medley. The pan was licked clean :) I would say 6 servings is a stretch, though. It barely fed 4 in my home (2 teenage boys & an athleet husband) We WILL make it again.

This is delicious & easy, definitely simmer for 30 min. first, though or it is too sweet from the wine.

French Silk Chocolate Pie III

This is outstanding. I used half baking choc. & 1/2 cocoa powder, it get's a 4 star because it has to be doubled. I used a pastry crust, next time I'd use a cookie crust.

Spicy Fish Soup

Reviewed: Feb. 4, 2009
Outstanding! I doubled the fish & omitted the shrimp. I substituted Rotel for green chili & tomatoe & it was just right but too spicy for one of my boys. I also added cubed potatoes at step #2 to make it a bit more hearty. A definite keeper :)

Fantastic! This was easy & delicious. The flavor was rich & luscious. I used a spring form pan & lined with parchment paper, dusted with cocoa. It was easy to plate up. Garnished with real whipped cream, fresh raspberries and drizzled with rasb. sauce.

This was pretty good, a bit bland. I added turnips and sweet potatoes for flavor and lots more pepper (double or more) Texture was wonderful. Comfort food to the max.
