Glazed Lemon Muffins

Reviewed: Oct. 7, 2008
This recipe was very good! i did make some changes of my own. I added lemon curd into the batter which made it nice and lemony. I got 36 muffins out of the recipe and used all of the topping. I gave each muffin a good amount of the topping and it made the muffins have a wonderful crunch. I added grated lemon zest into the glaze another way to give it nice lemon flavor. Everyone loved them and I would definitely make these again. I did not find them dense at all. Thank you for the recipe.

Key Lime Cake III

Reviewed: Oct. 1, 2008
I thought this recipe was just OK. I did some changes to get it where I thought it would better. I only did 3/4 cup of the oil and added 1 more egg. I made a batch of lime curd and when I took the cake out of the oven I poke holes in it and put a layer of lime curd and refrigerated it. I made the frosting and added more lime curd to the frost about 1/2 cup and some lime zest. This changed the cake flavor all together and tasted so much better

Chicken Piccata II

Reviewed: Jul. 24, 2008
The idea was good for this recipe, but it really lacked in flavor. After I fried the chicken, I removed the chicken and set it aside. I then added mushrooms and some garlic finely chopped. When the mushrooms were done, I added 1 tablespoon of flour and mixed it in and picked up all the fried bit. I then added 1/4 of white wine, 1/4 cup of lemon juice and the bouillon mixture. After it started to thicken I added the chicken back in for about 10 minutes. I garnished it with italian parsley and some chives. Taste again for salt and pepper. It was delicous.

Marbled Almond Roca

Reviewed: Jun. 13, 2008
I made this recipe this week and found it needed a few changes. Instead of pouring the hot caramel on top of the almonds, I mixed the almonds into the caramel and mixed it in. This way the almonds were well distributed into the caramel. I also use milk chocolate instead of semi-sweet and crushed some extra almonds on top of the melted chocolate.

Homesteader Cornbread

Reviewed: Nov. 6, 2007
This is such an awesome cornbread. Our church uses this recipe when we serve chili for special occasion dinners. We add white corn to the recipe. Bev who runs our kitchen gets teased that she picked this recipe because she is from Canada. Well you Canadians sure know how to make cornbread good!!!! Thank you for the recipe. I highly recommend it. Tina Fox - Lake Arrowhead, CA.

Perfect Lemon Curd

Reviewed: Jul. 4, 2006
This was a very good recipe. I tripled the recipe and froze what I didn't use. It is freezer friendly and I used as a filling for a wedding cake I made for friends. I did add a 1/2 more sugar and 1/4 more lemon juice to the recipe. This was very easy to make too.

Cream Puffs

Reviewed: Jun. 27, 2006
I made this recipe and found that the cream puffs were just excellent. The filling I thought needed to be lighter so I whipped 1 cup of whipping creme with 2 tablespoons of sugar until firm. Then I folded it into the pudding mixture and let it firm up overnight. I made this for a ladies luncheon for 125 ladies and it was a big hit.

This was a excellent recipe. We made it for our church dinner one night. It was a huge hit. The only thing we did different was we seasoned the beef with seasoning salt and fresh garlic when cooking. Other than that, it was easy and delicious. Thank you for posting it.
