About this Cook
I love everything about cooking! I love the fact that what I cook can make somebody else happy. It's the most rewarding thing I can do for somebody. I truly put my heart and soul into my dishes. I love cooking so much that I started my own catering company, Fox In The Woods Catering Company.
My favorite things to cook
I love cooking Italian and Mexican foods. I had the best teachers for my Mexican dishes, my parents are wonderful cooks. I love experimenting with different Italian dishes with fresh ingredients. I love baking too. I love trying new dessert dishes and I am always the one to volunteer a dessert for a function.
My favorite family cooking traditions
I love making dishes that my mother and father and grandma taught me to make. One of my favorites is homemade Taquitos with gucamole, Pork Chile Verde, Mexican rice, refried beans, my grandma Jennie's macaroni salad and my sister-in-law Patti's Strawberry pretzel salad. That is my favorite meal to make. My favorite time of year is Christmas when my mom and my aunts have our annual tamale party. We have so much fun making homemade tamales and just being together.
My cooking triumphs
I love having succesful dinner parties. I've done dinner parties for 50 or more people. I love cooking dinner for our church. I am in the catering business and I enjoyed cooking in client's homes.
My cooking tragedies
When I first got married, my husband was my food tester and would try all the dishes I was learning to make. Some were not so successful, but he has always been honest with me and encouraged me to never give up and keep trying. Now he would love to see me open my own restaurant.

Sam's Famous Carrot Cake
This is a really good carrot cake. The only thing I did different was I added pecans instead of walnuts and I added in 1/2 teaspoon of allspice for that extra kick. I think it's important to not change the buttermilk to regular milk. The buttermilk makes the cake tender.

Pumpkin Cheese Bread II
Thanks you all the nice reviews, but I have to tell you the orange zest is very important in this recipe. If your omitting it, your need to try it with it because it's what makes this bread so unique. Enjoy! Tina Fox

Roasted Red Potato Salad
This was good, but too many onions. I changed it to green onions 1/2 cup. It's much better eaten same day at room temperature. Needed more salt than 1/2 tsp. I used 1 teaspoon salt and pepper. I added 1/2 cup chopped red bell pepper and 1/2 cup celery. I also added 1-1/2 cups total of mayo. The potatoes suck up the mayo quick.
