Country Apple Dumplings
So EASY and so DELICIOUS! I used Cortland apples because I like them better and I also used five apples to make it more applely. I had my doubts that these would be good through the whole process especially when I poured a can of Mt. Dew on them but my GOODNESS they were WONDERFUL! Update: We used about seven apples and put the extra apples around the dumplings. The result: yummy baked apples in a delicious sauce with the best dumplings EVER. Wow! Whee!

Ham and Bean Soup
Yesterday I would have given this soup four stars. I made it in a rush and didn't let it cook long enough. Today I heated up the leftovers and had the MOST delicious soup EVER! It was thicker and much more flavorful than the day before. The only change I made in ingredients was to add corn. It was not spicy like the recipe might suggest but has a pleasant ham taste. This will be added to my recipe book!

Zucchini-Raspberry Bread
My final product was a dense bread with a lemony raspberry taste. I didn't have lemon zest so I squeezed in a teaspoon of lemon juice and and half teaspoon of lemon extract. (Thanks to reviewer, Ann) I used frozen raspberries but thawed them first. Since other reviewer said the raspberries were tart I tossed them in sugar first. This will be a keeper for us. Delicious!
