Mimi's Zucchini Pie
I have never made anything like this so I didn't know what to expect. I LOVED it. My husband thought it was good...he ate it with some ranch to add a little flavor I guess. I recommend more tomatoes, my husband isn't a fan of tomatoes so I only put tomatoes on half. And I put in way more cheese than it asked for! very yummy. I think it was even a little better the next day as left overs.

Cheesy Chicken Quesadillas
These were really easy to make. One thing we thought was that it tasted a little plain. Something was missing....Dont know what, so if you are planning on making this then either have a kickin sauce to dip in or add a couple things and make it your own. I liked this recipe because the sauce you make can be played around with a lot to fit your taste.

Parmesan-Crusted Chicken in PHILLY Cream Sauce
This was the first meal I cooked for my husband and I after we moved in together. He was so happy! This made me look like a good cook haha. It is pretty simple to make and is really good. I did have a hard time getting the crumbs and cream cheese to stick to the chicken breasts so I ended up cutting the chicken in to cubes and putting them in a frying pan with the crust mixture and cooked it as if it were a stir fry. It turned out a lot better than expected thats for sure.
