Chocolate Trifle
This is a great dessert for a big gathering - it makes a lot. The women loved it and wanted the recipe. It is easy to prepare. I did not allow enough refidgerater time and so I put it in the freezer for an hour to speed up the set-up process. It worked great!

Rolled Fondant
I made this fondant on a very humid day and had no problems and did not need to make any adjustments. It rolled perfectly and is a very nice consistancy. It does not get shiny like many other home-made versions of fondant. I did substitute exact proportions of karo syrup for the glucose syrup since I had it one hand. I will add a different extract to add more flavor next time.

Simple Scones
This was my first time making scones. This recipe was simple and turned out perfect. I made the cranberry/orange variation and we loved it. The portions of the scones are huge (the size of a piece of pie), so I will cut them into smaller pieces in future recipes.
