Chicken Enchilada Soup I
Very, very good soup. I deleted the tortilla chips in it per suggestions. I wish it were a little thicker. I also fried some tortilla strips and sprinkled them on top when I served- loved the crunch! Next time I am going to try to thicken it up...any suggestions?

Mulligatawny Soup I
I followed the recipe on this except celery (not a fan!) and I used one of the Costco rotiserrie chickens for the meat. This soup made my whole house smell so warm and cozy while it was cooking! I added the apples (chopped quite small) and was a little hesitant about it but you couldn't even tell they were in there - and I am super picky! My mother in law loved it and asked for the recipe and made it for her friends the next week. You know it is good if your mother in law asks for the recipe! I can't wait to make it again. This time I might add some coconut milk to it as well....

Grilled Ginger-Peanut Pork Tenderloin
Wow- this was so easy and turned out so good! I marinated over night and my husband requested this be a regular meal. Even my SUPER picky kids liked it. I did not have fresh ginger so I used 1 tsp. ground ginger and it worked great. Next time I might double the marinade and keep half out to boil down for a rice sauce. This is definitely a keeper recipe!
