Mexican Bean Salad

Reviewed: Dec. 28, 2009
Amaaazing recipe! the dressing was phenomenal but i have to say that it was too much. I had a total of seven cans of different kind of beans and this dressing was the perfect amount for it. But next time I'm making less, I will be definitely cutting down on the measurements. Really great recipe. The flavor is amaazing!

Taqueria Style Tacos - Carne Asada

Reviewed: Nov. 9, 2009
The marinade was absolutely perfect. The flavors were on spot. I actually cut the steak pieces into strips before marinading just to make it a little hassle free the next day. I marinaded the meat over night and it turned out very flavorful. I actually used this for fajitas and not tacos, which turned out wonderfully. I also made the salsa/sauce to go along with it. I toasted and dipped four new mexico chile pods in water but ended up using only 2 since the jalapenos had enough heat. Even with only 2 chile pods in the salsa, it turned out pretty spicy, but excellent flavors due to the roasting of the vegetable.

White Chocolate Raspberry Cheesecake

Reviewed: Nov. 9, 2009
Absolutely AMAAAZING!!! This recipe was so easy and turned out just delicious. It looked fabulous with the marbled red and white top. However, I did use seedless raspberry jam instead of making my own syrup. But that was a bit too heavy maybe, because it made indentations where i had placed it on the top even after baking. But it still looked marvelous. I did use more white chocolate chips to enhance the white chocolate flavor even more. And as other reviewers advised, I melted the chocolate with the half n half in microwave, which was easy and hassle-free.

Soft Oatmeal Cookies

Reviewed: Jul. 10, 2009
DELICIOUS!!! the sugar was just enough in this recipe so I didn't dip the fork in extra sugar. I did add raisins to half the batch and cranberries and white chocolate chips to the other half. Both kinds were wonderful...everyone loved them. I actually flattened them and baked them for a full 10 minutes since my family likes these more crunchy than soft...perfect!!

Special Deviled Eggs

Reviewed: Apr. 21, 2009
Ultimate recipe!! I also added some chopped celery for extra oomph, and the eggs turned out great, even though it was my first time ever making deviled eggs. I recommend not using a full 1/4 cup mayo. Instead start with a few tablespoons and judge by the consistency if more is needed. Also, drain the horseradish and the relish (I used chopped dill pickles) so the mixture isn't too runny. =)

Swiss Chicken Casserole II

Reviewed: Mar. 22, 2009
Very easy and good recipe. I like my food WELL-seasoned, so I seasoned both sides of the chicken with freshly ground black pepper, paprika, and a little salt. I also added pepper, paprika, garlic powder and dried herbs to the soup mixture. I didn't have swiss cheese on hand, so I used some slices of cheddar and monterey jack. It tasted great, but didn't look that appetizing, so next time I'll add some peas and carrots for color.

Red Velvet Cake III

Reviewed: Mar. 21, 2009
GREAT RECIPE!! it was my first time making a red velvet cake, and now me and my family are huge fans! I upped the cocoa powder to 4T as others suggested, which gave it the perfect combination of chocolate and vanilla. The cake was moist and looked beautiful! TIP: for the frosting, make sure that the cream cheese is at room temperature and it should be beaten before added the milk, otherwise, there will be lumps, which are stubborn to get out. The frosting did have a slightly yellow hue because of the pudding, but it tasted delicious--fingerlickin good!!

Buttermilk Chocolate Cake with Fudge Icing

Reviewed: Mar. 1, 2009
this for the fudge icing only...haven't tried the cake. i made the icing with the "black magic cake." DELICIOUS icing!!! foolproof recipe!! and the consistency can be manipulated a little depending on how long you beat it for. TIP: spread the icing slightly warm..it'll be much easier to work with.

Coconut Poke Cake

Reviewed: Jan. 28, 2009
MMMMmmmmMMMMMmmmm....but after some modifications: I used coconut milk in the cake mix instead of the water, then incorporated the remaining coconut milk (about 1/2 cup) with a can of cream of coconut, added only 2 tablespoons of sweetened condensed milk for the liquid topping. It was a little too thick for the cake to absorb all at once, so I poured it on top in intervals. I briefly heated the mixture in the microwave before adding the last batch because it had hardened a bit. The cake looked a little messy but was covered up with the whipped topping....DEELICIOUS!

Home Style Macaroni and Cheese

Reviewed: Jan. 28, 2009
Excellent!! but after a few modifications: I used 1/3 cup of butter and 4 tablespoons of flour, 4oz of cream cheese, 4oz of velveeta cheese (cubed), added 1/4 cup heavy cream, used 1 lb of pasta, and an additional 1/2 cup of sharp cheddar cheese. I also didn't bake, because I liked the very creamy consistency that it already had!! DEEELICIOUS!
