Yummy Sweet Potato Casserole

A friend of mine usually makes the sweet potato casserole with marshmallows-but for our taste it is always way too sweet--covering the delicious taste of the sweet potatoes. I found this recipe and simply altered the sugar in the sweet potatoes, cutting it back to only a 1/4 cup. I also suggest doubling the topping to make it nice and crunchy! I didn't have pecans on hand, but did have carmelized walnuts--DH loved it.

Maple Walnut Pumpkin Pie

Made this pie to take to work--followed directions exactly and got rave reviews. I thought it was very good just the way it is, but I like to experiment, so when I made this for Thanksgiving dinner I made a few changes. I didn't use a graham cracker crust, I made a flaky pie crust. I also used the reduced fat Eagle Brand sweetened condensed milk, 3 tablespoons of PURE maple syrup, 2 teaspoons of pumpkin pie spice and fresh pumpkin. For the topping I used 3/4 cup of chopped walnuts as the half of cup seemed to be lost in the topping. Will definitely make again.

Spooky Witches Fingers

Loved this recipe. I followed the cookie recipe without any changes using top quality butter because after all this is a shortbread cookie which gets it's flavor from the butter. I did not use the gel, but instead used strawberry jam mixed with a little red food coloring. Some of my guests would eat the witches fingers and others wouldn't even look at them....so funny! Will make again next year!!! Thank you!

Sweet and Spicy Popcorn

OH MY.....I just can't stop eating this popcorn. I love popcorn to begin with, so when I saw this recipe, I figured I would give it a shot. I cooked my popcorn in the pan, then used spray butter (Pam) to coat the popcorn, and put all the spices in a shaker jar and just shook it all over the popcorn! Scrumptious. A real different twist on popcorn...thank you for sharing.

Applesauce

Thought the recipe was excellent--I cut back the sugar to 1/4 cup because the apples I used were sweet enough. I put the applesauce in a processer just to chop it up a bit more---was like having apple pie without the crust. My DH said he would prefer to have this than store bought applesauce. A nice healthy treat on a cool fall night....thanks

Beef Barley Vegetable Soup

I did alter the recipe a bit as I did not have have stewed tomatoes on hand; the soup was delicious without. I also added some cut up potatoes--great soup for a cool fall night.

Mock Lobster

Recipe was very moist and my DH loved the flavor; but we are both from the East coast and enjoy lobster and this does not resemble lobster. I think some may have confused dipping the chicken in the butter for lobster--either way, the recipe was pretty good.

Baked Potato Pizza

With some changes my husband thought this pizza was awesome. First I always use Jay's Signature Pizza crust from this site (love it). Second, we microwaved our potatoes to speed up the process. I used a combination of sour cream and low fat hidden valley ranch dressing (as suggested by others) and it was scrumptious. I'm glad I did that because I feel that the sour cream alone would have been very bland. We really enjoyed this new spin on our pizza...thanks for sharing.

Maple Apple Crisp

I thought this recipe was good with a few of the changes suggested by reviewers. I used a mixture of gala and granny smith apples. I doubled the crumbled but DID NOT double the butter. I used a little bit of lemon juice and added cinnamon and nutmeg. I did not have pure maple syrup so I used a light maple syrup which didn't really give much maple flavor. I have since then bought PURE maple syrup and will have to try this again--maybe this time adding some cranberries to the mix. thank you

Pumpkin Parfait

I thought this recipe was very good--but then again, I am a huge pumpkin fan. I did follow the reviews of others and used the LARGE box of Jell-o instant vanilla pudding. Next time I plan to try the french vanilla pudding---yum! I topped it off with some whipped cream and crumbled graham crackers--a nice fall treat. Thank you!

Groovy Green Smoothie

I thought this was excellent--lots of banana flavor. I followed the recipe exactly but used a frozen banana and flavored yogurt (because that's all I had) and it turned out perfect. My husband asks for this smoothie all the time--great healthy drink for both us! Thank you for a great recipe!

Waffles I

Per other reviews, I too separated my eggs; beat the egg white till soft peaks formed and folded them in last. Result--nice crispy waffles on the outside and chewy on the inside. I will try adding vanilla beans and pumpkin flavoring (another reviewers suggestion) next time. I will make these yummy waffles again! thank you!

Laurie's Shepherd's Pie

Shepherd's pie has always been a favorite of mine--however, my husband is not as fond of it. I made this exactly as stated leaving the green pepper out--and my husband LOVED it. Now I know that I cannot make shepherds pie without a pie shell for my hubby....

Smooth Sweet Tea

I am a northerner, but recall the delicious sweet tay I had in the south and have been craving it when the weather up north gets warm. I decided to check allrecipes.com (my favorite site) and found this recipe. I followed it exactly except for the amount of sugar which I cut back to 3/4 cup per other reviews. Personally, I still found it a bit sweet for my taste, so next time I will start with a half cup and taste from there. This tea was delicious--and will be my drink this summer!!!

Eggplant Rollatini

I thought this recipe was pretty good. I did have a hard time slicing the eggplant thin lenghtwise. I do have a hand slicer, but could only slice it the short way. I sliced it by hand, but did not slice thin enough, so I made the eggplant just like lasagna. I did not fry as the recipe stated, but baked as other reviews stated--it was good--even better the second day.

Blueberry Oat Waffles

I thought this recipe was good but I did use whole wheat flour instead just to be more healthy. I did use applesauce in place of the oil as well and added some cinnamon--worked out well and was delicious. thank you for sharing
